And is primarily a meat-based snack but has been adapted with veggies too.

I have shared quite a few cutlet recipes till now, which are generally based on either one key vegetable or perhaps grains or bread. But this is one such recipe where I can use a choice of vegetables like beans, carrots, peas, potatoes, beetroot, and sweet corn. Thus making it a healthy, nutritional snack recipe. Moreover, the veg cutlet recipe is an ideal recipe for those stubborn kids who hesitate or do not prefer to have vegetables in their meals. The color and texture of this veg cutlet make it appealing and irresistible for kids. I generally prepare vegetable cutlets with either semolina / rava or breadcrumbs which gives you a whitish or brown cutlet recipe. But in this recipe, I have used crushed corn flakes which gives it a bright golden brown color.

The veg cutlet recipe is fairly easy and can be prepared within minutes, yet I would like to share some tips and suggestions while preparing. Firstly, as I mentioned previously the recipe is open-ended in terms of adding veggies. Hence you can experiment and extend with other veggies. Perhaps broccoli, snow peas, and leafy vegetables on top of the vegetables used in this recipe. Secondly, the shaping of the cutlet can be done as per your preference. I have shaped it to be semi-cylindrical, but you can also use a shaper or a simple patties shape. Lastly, deep fry these vegetable cutlets in low to medium hot oil in small batches. Alternatively, you can also shallow fry or pan fry it, but deep frying is a much better option.

Ingredients
  

  • !For veg mixture
  • 2 tbsp oil
  • 5 cloves garlic, finely chopped
  • ½ tsp chilli flakes
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 3 tbsp peas
  • ½ capsicum, finely chopped
  • ½ tsp turmeric
  • ½ tsp chilli pwoder
  • ½ tsp cumin powder
  • ½ tsp garam masala
  • ½ tsp pepper powder
  • 1 tsp salt
  • 3 potato, boiled & mashed
  • 2 slice bread
  • ¼ cup milk
  • ½ cup poha, soaked
  • 2 tbsp coriander, finely chopped
  • 2 tbsp corn flour
  • !For coating:
  • ½ cup maida
  • ½ cup corn flour
  • ½ tsp pepper powder
  • ½ tsp salt
  • ½ cup water
  • bread crumbs, for coating
  • oil, for frying

Instructions
 

  • Firstly, in a pan heat 2 tbsp oil add 5 cloves garlic, ½ tsp chilli flakes and saute until the garlic turns aromatic.
  • add 1 onion and saute until the onion softens.
  • Additionally, add 1 carrot, 3 tbsp peas, ½ capsicum, ½ tsp turmeric, ½ tsp chilli powder, ½ tsp cumin powder, ½ tsp garam masala, ½ tsp pepper powder and 1 tsp salt.
  • Saute on low flame until the spices turn aromatic.
  • Now add 3 potato and mix well.
  • Transfer the mixture to a large bowl and allow to cool completely.
  • On a plate take 2 slice bread and pour ¼ cup milk.
  • Mash smooth making sure the bread turns dough texture.
  • Add bread to the cutlet mixture. Bread helps to make the cutlet crispy.
  • Also add ½ cup poha, 2 tbsp coriander and mix well.
  • If the mixture is sticky, add 2 tbsp corn flour and mix forming a dough.
  • Shape the cutlet into cylindrical shapes and keep it aside.
  • To prepare the slurry, in a bowl take ½ cup maida, ½ cup corn flour, ½ tsp pepper powder, ½ tsp salt and ½ cup water.
  • Mix well making sure the slurry is smooth and lump free.
  • Dip the cutlet into the slurry and coat it with breadcrumbs.
  • Deep fry the cutlet in hot oil stirring occasionally.
  • Fry until the cutlet turns golden brown and crispy.
  • Drain off the cutlet to remove excess oil.
  • Finally, enjoy Crispy Veg Cutlet Recipe with sauce.
