However, in this recipe, I have shown how to make a purpose-based bread which makes it fresh and also convenient. You may use store-bought roti wrap made using maida or all-purpose flour. This is certainly an easy option, but may not be necessarily a healthy option. On a long day or busy day, I may be inclined to use store-bought wrap, but certainly inclined to make it freshly. Do try this way and I am certain that you would love this recipe for any meal of the day.

Firstly, if the boiled and mashed potatoes contain more moisture, then add breadcrumbs to absorb it. Add breadcrumbs only if you cannot shape the sautéed vegetables into a cylindrical shape. Secondly, In this recipe, I have shown how to make the roti wrap particularly for this recipe. But leftover chapati, roti, and even paratha can also be used with the same texture and taste. Lastly, if you prefer a spicy veg frankie then spread Schezwan sauce with tomato sauce on top of roti/wraps/paratha’s. Avoid it if you are serving it for kids.

Ingredients
  

for dough:

  • 2 cup maida
  • ½ cup wheat flour
  • ½ tsp salt
  • ¼ cup curd
  • water, for kneading
  • oil, for roasting

for stuffing:

  • 2 tbsp oil
  • 1 tsp cumin
  • pinch hing
  • 2 chilli, finely chopped
  • 2 cloves garlic, finely chopped
  • ½ tsp ginger paste
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • ½ tsp coriander powder
  • ½ tsp cumin powder
  • ½ tsp aamchur
  • 2 tbsp chilli sauce
  • 2 tbsp tomato sauce
  • 3 potato, boiled & mashed
  • ½ tsp salt
  • 2 tbsp coriander, finely chopped
  • 2 tsp lemon juice
  • oil, for roasting

for chilli vinegar:

  • 3 tbsp vinegar
  • 2 chilli, finely chopped
  • ¼ tsp salt

for roll:

How to make roti for frankie:

  • Firstly, in a large bowl take 2 cup maida, ½ cup wheat flour, ½ tsp salt and ¼ cup curd.
  • Mix well making sure everything is well combined.
  • Now add water as required and knead to smooth and soft dough.
  • Grease the dough with oil, cover and rest for 20 minutes.
  • After the dough has rested well, knead the dough again and pinch a ball-sized dough.
  • Dust with maida and roll thin.
  • Now cook the roti on hot pan spreading oil.
  • Flip over and cook both sides.
  • Also, spread the oil and cook until the roti is cooked from both sides. Keep aside.

How to make stuffing for kathi roll:

  • Firstly, in a pan heat 2 tbsp oil. add 1 tsp cumin, pinch hing, 2 chilli, 2 cloves garlic and ½ tsp ginger paste. Saute well until the raw aroma goes off.
  • Keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp coriander powder, ½ tsp cumin powder, ½ tsp aamchur, 2 tbsp chilli sauce and 2 tbsp tomato sauce.
  • Saute on low flame until the spices are well combined.
  • Now add 3 potato, ½ tsp salt and mix well.
  • Mix until the spices are well combined.
  • Now add 2 tbsp coriander, 2 tsp lemon juice and mix well.
  • Once the mixture is cooled slightly, shape the tikki.
  • Roast on hot pan adding oil as required.
  • Roast both the sides until the tikki turns golden brown and crispy. Keep aside.

How to make chilli vinegar:

  • In a small bowl take 3 tbsp vinegar, 2 chilli and ¼ tsp salt.
  • Mix well, and chilli vinegar is ready to use.

How to assemble veg frankie.

  • Firstly, take roti and spread green chutney.
  • Place the prepared aloo tikki, and top with coriander, chaat masala, onion, chilli vinegar and tomato sauce.
  • Roll tight and wrap in butter paper.
  • Finally, Veg Frankie Recipe is ready to enjoy with tomato sauce.
