i am a big fan of combo recipes and i always look for rice and gravy combo recipe which can be easily packed to lunch boxes. these combos make it a balanced meal and do not compromise on the taste part too. continuing my obsession, i am here today posting on of the favourite indo chinese combo recipe. traditionally, whenever we plan to make or order fried rice, there has to be a manchurian or chilli gravy with it. the gravy helps to ease the dryness from the rice and also adds the additional flavour. but these 2 recipes can be clubbed together to just one recipe and why bother doing it separately? in other words, you prepare the manchurian sauce as you prepare it, add veggie manchurian balls and rice and stir fry it. that’s it and your fried rice with manchurian balls is ready to be served.

furthermore, some more additional tips, suggestions and variations to the most popular manchurian fried rice. firstly, the manchurian balls can be anything and not necessarily has to be a vegetarian option. you may use as per your preference like chicken, or any meat variants too. secondly, i strongly prefer to use leftover long grain rice for this recipe. it has to be dry or 80% cooked rice. note that we are mixing the rice manchurian sauce which happens to be more liquid compared to the traditional fried rice recipe. lastly, the final tip is to serve the rice immediately once it cooked and prepared. this is because the manchurian sauce it not absorbed and only coated to the rice and hence rice would not lose its crunchiness.

for manchurian balls:

  • 2 cup cabbage, shredded
  • 1 carrot, finely chopped
  • 3 tbsp spring onion, finely chopped
  • ½ onion, finely chopped
  • ½ tsp ginger garlic paste
  • 1 tbsp chilli sauce
  • ½ tsp salt
  • ¼ cup maida
  • ¼ cup corn flour
  • oil, for frying

for fried rice:

  • 2 tbsp oil
  • 1 inch ginger, chopped
  • 2 clove garlic, chopped
  • 1 chilli, slit
  • 2 tbsp spring onion, chopped
  • ½ onion, finely chopped
  • ½ capsicum, finely chopped
  • 1 carrot, finely chopped
  • 2 tbsp vinegar
  • 2 tbsp soy sauce
  • ½ tbsp chilli sauce
  • ½ tsp salt
  • ¼ cup corn flour slurry
  • ¼ cup cabbage, shredded
  • 3 cup cooked rice
  • ¼ tsp pepper powder
  • 2 tbsp spring onion, chopped

Instructions

  • firstly, in a large bowl take 2 cup cabbage, 1 carrot, 3 tbsp spring onion, ½ onion, ½ tsp ginger garlic paste, 1 tbsp chilli sauce and ½ tsp salt.
  • mix well making sure everything is well combined.
  • now add ¼ cup maida and ¼ cup corn flour.
  • combine well forming a soft dough. if the dough is loose, then add a tbsp of maida and form a dough.
  • grease hands with oil and prepare a small ball sized balls.
  • deep fry in hot oil keeping the flame on medium.
  • fry until the ball turns golden brown and crisp. drain off the manchurian balls over kitchen paper and keep aside.

how to make manchurian style veg fried rice:

  • in a large wok take 2 tbsp oil, 1 inch ginger, 2 clove garlic, 1 chilli and 2 tbsp spring onion.
  • stir fry on high flame without burning.
  • now add ½ onion, ½ capsicum and 1 carrot.
  • stir fry on high flame without overcooking the vegetables.
  • now add 2 tbsp vinegar, 2 tbsp soy sauce, ½ tbsp chilli sauce and ½ tsp salt.
  • stir fry until everything is well combined.
  • add ¼ cup corn flour slurry. to prepare corn flour slurry, mix 1 tsp corn flour in ¼ cup water.
  • cook until the sauce turns glossy.
  • now add prepared manchurian balls and ¼ cup cabbage.
  • stir fry until the balls are well coated with sauce.
  • further, add 3 cup cooked rice and ¼ tsp pepper powder.
  • stir fry without breaking the rice grains.
  • finally, add 2 tbsp spring onion and enjoy veg manchurian fried rice.
