RAVA - 1 CUP, COARSE

firstly, in a blender take 1 cup rava and blend to a fine powder.

RAVA POWDER

transfer the powdered rava into a large bowl.

RICE FLOUR - 2 TBSP

add 2 tbsp rice flour, 2 tbsp wheat flour and mix well.

HOT OIL - 2 TBSP

now add 2 tbsp hot oil and mix well well. adding hot oil to flour helps to get crispy dosa

CURD - 1 CUP

further add 1 cup curd, 1 tsp sugar, ½ tsp salt and mix well. adding curd helps to give sourness and activate baking soda

WATER - 1 CUP

add 1 cup water and mix using a whisk

SMOOTH BATTER

mix until a smooth lump-free batter is formed

REST - 10 MINUTES

rest for 10 minutes helping rava to absorb water

BAKING SODA - 1/4 TSP

now add ¼ tsp baking soda and mix gently.

SPREAD GENTLY

pour the dosa over hot tawa and spread gently

OIL - 1 TSP

pour a tsp of oil and roast on medium flame until it turns golden brown

CRISPY & TASTY

scrape the dosa from sides and fold half

READY TO EAT

finally, instant dosa with sooji is ready to enjoy with garlic chutney
