idli sambar | sambar recipe for idli-dosa | hotel style idli sambar recipe with detailed photo and video recipe. basically, sambar is a must dish when it is a south indian breakfast for idli and dosa.
idli sambaridli sambar recipe or sambar recipe for idli-dosa, hotel style idli sambar recipe with step by step photo and video recipe. idli, dosa’s or medu vada is not complete until it is not served with a delicious lentil based curry or soup. in many region, idlis or medu vada are even dipped in this sambar and than server. plus it is than topped with coconut chutney which gives an immense pleasure to your tongue.

i personally prefer the sambar prepared just with lentil aka idli tiffin sambar and not with coconut. however, in this sambar recipe i have added coconut while grinding. this hotel style idli sambar recipe is my husband’s favourite sambar recipe for idli and dosa’s. also, this recipe is coming from his aunt where he developed the taste for it. i must admit now that even i am a big fan of this sambar recipe especially when idli or palak medu vada are dipped in it.

according to wiki, sambar was first originated in karnataka. in kannada ‘sambaru padharatha’ means mix of spices and condiments. certainly this recipe of sambar goes very well with the meaning of sambar. however, if you are running out of time during your busy mornings, than skip all the spices for roasting. add sambar powder with garam masala and coconut for grating. you should be able to get the same taste.

Ingredients
for masala:
  • 1 tsp cumin seeds / jeera
  • 1 tsp urad dal
  • 2 tsp coriander seeds
  • 1 tsp chana dal
  • ¼ tsp methi seeds / fenugreek seeds
  • 5 kashmiri red chillis, dried
  • few curry leaves
  • 1 tsp oil
  • ¼ onion, roughly chopped
  • ½ tsp garlic paste / 3 garlic cloves
  • ¼ cup coconut, fresh / desiccated
  • small gooseberry sized tamarind
  • ½ tsp garam masala powder
  • water as required, to blend smooth
for hotel style sambar:
  • 1 tsp oil
  • ½ onion, diced into cubes
  • ½ potato, diced into cubes
  • ½ tsp turmeric powder
  • salt to taste
  • ¼ cup beans, chopped
  • 1 cup cooked toor dal
  • 3 cups water or as required, to adjust consistency
  • small piece of jaggery / gud
  • few coriander leaves, chopped
for tempering:
  • 1 tsp oil
  • ¾ tsp mustard seeds
  • ¾ tsp urad dal
  • pinch of hing / asafetida
  • few curry leaves
Instructions ( 1 cup =255 ml)
hotel style sambar masala recipe:
  1. in a wide pan add oil, cumin seeds, urad dal, chana dal, coriander seeds, methi, red chillis and few curry leaves.
  2. now add some onions and garlic paste.
  3. switch off the flame and add coconut.
  4. add a piece of tamarind and garam masala powder.
  5. blend to smooth paste.
hotel style sambar recipe:
  1. in a large kadai add a tsp of oil and saute diced onions till they sweat.
  2. now add potatoes and fry for a minute
  3. along with water also add turmeric and salt to taste.
  4. now add beans and cook for a minute.
  5. add prepared masala paste and give a good stir. boil for 5-8 minutes.
  6. add cooked dal.
  7. also add 2-3 cups of water to get desired consistency.
  8. add a small piece of jaggery.
  9. prepare the tempering and pour it to sambar
  10. add few chopped coriander leaves and give a good mix.

hotel style sambar masala recipe:

  1. in a wide pan add a tsp of oil along with cumin seeds, urad dal, chana dal, coriander seeds, methi, red chillis and few curry leaves.

  2. saute for a minute on medium flame till it turns fragrant. do not burn the spices.idli sambar
  3. now add some onions and garlic paste. continue to saute till the raw smell disappears.sambar for idli-dosa
  4. switch off the flame and add coconut. saute just to make coconut warm and also to cool the mixture.idli sambar
  5. transfer all the roasted spices into a small mixer jar.idli sambar
  6. add a piece of tamarind and garam masala powder.sambar for idli-dosa
  7. add water as required and blend to smooth paste. keep aside.sambar for idli-dosa

hotel style sambar recipe:

  1. in a large kadai add a tsp of oil and saute diced onions till they sweat.sambar for idli-dosa
  2. now add potatoes and fry for a minutesambar for idli-dosa
  3. add 1 cup of water.hotel style idli sambar
  4. along with water also add turmeric and salt to taste. cover and cook till potatoes are ¾th done.hotel style idli sambar
  5. now add beans and cook for a minute.hotel style idli sambar
  6. add prepared masala paste and give a good stir.hotel style idli sambar
  7. once the masala comes to a boil add a cup of water and boil for 5-8 minutes.hotel style idli sambar
  8. add cooked dal. make sure your dal is cooked well.hotel style idli sambar
  9. also add 2-3 cups of water to get desired consistency.hotel style idli sambar
  10. add a small piece of jaggery. you can alternatively use sugar.hotel style idli sambar
  11. add some salt if required. give a good mix and boil for another 5 minutes. switch off the stove.idli sambar
  12. prepare the tempering. add a tsp of oil along with mustard seeds, urad dal and hing.idli sambar
  13. once they splutter, add few curry leaves.idli sambar
  14. pour the tempering over prepared sambar.idli sambar
  15. add few chopped coriander leaves and give a good mix.idli sambar
  16. serve hotel style sambar with idlis or dosas along with chutney.

notes:

  • first of all, boil the masala well else you the sambar doesn’t taste good.
  • in addition, add any veggies of your choice like carrot, eggplant, drumstick, radish.
  • most noteworthy, do not burn the masala while roasting. as you end up with bitter taste.
  • furthermore, if you do not have jaggery, alternatively use sugar.
  • finally, adjust the consistency according to your preference.
