i love mumbai pav bhaji and vada pav. so whenever i go to pav bhaji stalls, i make sure i try everything, rite from pani puri, pav bhaji to tawa pulao. tawa pulao goes well with onion-tomato raita or plain yogurt.

this is the easy and quick recipe usually prepared over tawa. however, it is difficult to prepare on small tawa so i will be using kadai. the pulao is made with different combination of vegetables and pav bhaji masala. there is no hard and fast rule in preparing tawa pulao. each street-food vendor prepares in his own style.

Ingredients
for cooking rice:
  • 1 cup basmati rice
  • ½ tsp turmeric powder
  • 5 cups water
  • ½ tsp oil
  • salt to taste
for preparing tawa pulao:
  • 1 tbsp butter / oil
  • ½ onion, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tomato, roughly chopped
  • ¼ cup peas, fresh / frozen
  • 1 potato, boiled and diced
  • ½ capsicum, finely chopped
  • 2 tsp red chilli paste
  • 2 tsp pav bhaji masala
  • salt to taste
  • 3 tbsp water
  • 2 tsp lemon juice
  • few coriander leaves, finely chopped
Instructions ( 1 cup =255 ml)
  1. wash the rice, and cook the rice in low to medium flame without the lid. add oil, salt and turmeric powder.
  2. in a large pan or kadai take some butter and saute finely chopped onions.
  3. once the onions turns slightly translucent, add in ginger garlic paste.
  4. next is to add roughly chopped tomato and cook till they turn soft.
  5. add some fresh or frozen peas.
  6. mash all the veggies well using potato masher.
  7. now add boiled and diced potatoes.
  8. time to add finely chopped capsicum and saute.
  9. add red chilli paste (red chilli paste is prepared by mixing 2 tsp of chilli powder with 5 tsp of water), salt and pav bhaji masala.
  10. also add some water to make the masala moist.
  11. be gentle while mixing with masala.
  12. squeeze some lemon juice and add coriander leaves.
  13. mix well and serve tawa pulao with your favourite onion-tomato raita

  1. wash the rice, and cook the rice in low to medium flame without the lid. add oil, salt and turmeric powder.

  2. do not cook the rice fully and the rice should be just almost cooked. strain the water from rice and keep it aside. bring the almost cooked rice to room temperature.

  3. in a large pan or kadai take some butter and saute finely chopped onions.

  4. once the onions turns slightly translucent, add in ginger garlic paste. saute till the raw smell disappears.

  5. next is to add roughly chopped tomato and cook till they turn soft.

  6. add some fresh or frozen peas. you can also use cooked peas.

  7. mash all the veggies well using potato masher.

  8. now add boiled and diced potatoes. mash a few potatoes using spatula.

  9. time to add finely chopped capsicum and saute. do not over cook capsicum as you need to enjoy the crunchy bite of capsicum in pulao.

  10. add red chilli paste (red chilli paste is prepared by mixing 2 tsp of chilli powder with 5 tsp of water), salt and pav bhaji masala.

  11. also add some water to make the masala moist. cook for 4 minutes on medium flame.

  12. lastly add in cooked rice.

  13. squeeze some lemon juice and add coriander leaves. be gentle while mixing with masala. do not break the rice grains.

  14. mix well and serve tawa pulao with your favourite onion-tomato raita


notes:

  • add vegetables according to your choice.
  • adding pav bhaji masala is must. do not skips that.
  • be careful while mixing rice. the rice grains should not break
  • pulav stays fresh for 2 days and taste great the next day.
  • pack the pulao to your kids lunch box along with some raita.
