i have posted quite a few dosa recipes with masala or spice added directly to the dosa batter. but this recipe is very unique! it is mainly because of the combination of instant dosa recipe with baking soda and dosa masala recipe. basically, this recipe is a combination of my previous instant rava appam with the masala i used for the ridge gourd dosa or cabbage dosa recipe. i know it is a weird combination and more importantly, a true fan of kerala appam’s recipe would certainly disagree with this recipe. yet i would like to propose they try this recipe once and i am 100% sure you would like it. perhaps give a try with the combination of roasted gram dal chutney and masala appam and eventually start serving without any sides or curry.

furthermore, some more additional tips, suggestions and variants to the masala appam recipe. firstly, this recipe is an instant version of the traditional appam recipe. appam is made with rice and optional urad dal with yeast for fermentation. you may follow the same traditional appam recipe with the masala used in this recipe. secondly, i have added baking soda as it is an instant recipe for fermentation. however, using yeast would be more desirable when compared to baking soda. if you are comfortable using yeast, you should use it. lastly, i personally feel the combination of roasted dal gram chutney and dosa is an ideal combination for breakfast. but you may very well extend this recipe with other types of chutney or any meat-based curry.

Ingredients
  

  • 1 cup rava / semolina
  • ¾ cup poha, thin
  • ½ cup coconut, grated
  • 4 dried red chilli, soaked
  • ½ tbsp cumin
  • 1 tbsp coriander seeds
  • ¼ tsp methi / fenugreek seeds
  • 1 tsp jaggery
  • small piece tamarind
  • ¼ cup curd
  • ½ tsp salt
  • water, for grinding
  • ½ tsp eno fruit salt

Instructions
 

  • firstly, in a mixer jar take 1 cup rava, ¾ cup poha and ½ cup coconut.
  • also add 4 dried red chilli, ½ tbsp cumin, 1 tbsp coriander seeds, ¼ tsp methi, 1 tsp jaggery and small piece tamarind.
  • add ¼ cup curd, ½ tsp salt and 1 cup water.
  • grind to smooth batter adding water as required.
  • transfer the batter to a large bowl and add water as required.
  • mix well adjusting consistency. rest the batter for 10 minutes.
  • now add ½ tsp eno and mix gently.
  • once the batter turns frothy, immediately pour over the hot tawa.
  • keep the flame on medium and cook until the top of appam is cooked completely.
  • finally, enjoy instant masala rava appam with coconut chutney.

  • firstly, if you see the top of dosa is not getting cooked well, then cover and cook on medium flame.
  • also, make sure to add eno just before preparing appam. else the appam will not be soft.
  • additionally, if you are looking for a substitution of eno, then you can replace it with instant yeast or baking soda.
  • finally, instant masala rava appam recipe tastes great when served hot and spongy.
