well, to be honest, i am pretty sure that most of my readers may not be aware of this recipe. particularly for that outside of karnataka may not have clue about this recipe. having said that, it is a common and a popular breakfast recipe for most of south canara, mangalore and udupi region. this recipe was introduced to me from my mother in law. initial days after my marriage, i was really sceptical with this recipe, but the taste has just taken me. fast forward today, i make this frequently for my morning breakfast, and also for lunch. the best part, i can use the dosa batter for other veggies too. i use eggplant, onion, methi leaves, tomato and also cucumber. but as of now, the personal best is my ridge gourd dosa with a scoop of butter to top it.

furthermore, i would also like to mention some more additional tips, suggestions and variants to this heerekai dosa recipe. firstly, while slicing and chopping the ridge gourd, make sure to slice it thin. if you slice it thick, you may not get a perfectly cooked ridge gourd. it would take more time to cook and the layering would get burnt. secondly, the combination of sweet, sour, spiciness and the salt has to be balanced for this recipe. however, when grounded with rice, the effect of these ingredients lowers. hence generally you need to be generous while adding these 4 ingredients. lastly, there is no hard and fast rule to make this recipe with just ridge gourd and you can choose any vegetables as per your choice.

Ingredients
  

for soaking

  • 1 cup rice
  • 2 tbsp urad dal
  • ½ tsp methi
  • 7 dried red chilli
  • water, for soaking

for grinding:

  • ½ cup coconut
  • 2 tbsp coriander seeds
  • 1 tbsp cumin
  • ¼ cup jaggery
  • small ball sized tamarind
  • ½ tsp turmeric
  • 1 tsp salt

other ingredients:

  • 1 large ridge gourd
  • oil, for roasting

Instructions
 

  • firstly, in a large bowl soak 1 cup rice, 2 tbsp urad dal, ½ tsp methi and 7 dried red chilli for 4 hours.
  • drain off the water and transfer to the mixi.
  • add ½ cup coconut, 2 tbsp coriander seeds and 1 tbsp cumin.
  • also, add ¼ cup jaggery, small ball sized tamarind, ½ tsp turmeric and 1 tsp salt.
  • blend to smooth paste adding water as required.
  • transfer the batter into a large bowl. this batter is called as uppu puli dose batter or uppu huli dosa batter.
  • now take 1 large ridge gourd and peel the skin of it.
  • slice the ridge gourd to medium thickness. you can keep it slightly thin if you wish.
  • now dip the heerekai slice into batter and place on tawa.
  • start placing the slices forming a circle dosa.
  • add 1 tsp oil and cover the dosa and cook on a medium flame for 2 minutes.
  • once the dosa is cooked from the bottom, flip over and roast.
  • roast both the sides until the dosa is cooked completely.
  • finally, enjoy heerekai dosa with coconut oil or butter.
