baby potato fry recipe | spicy small potato fry | pan fried baby potatoes with detailed photo and video recipe. an easy and simple pan-fry roasted recipe made with small or baby potatoes. it is an ideal recipe made and served as a side dish to indian flatbreads or to any rice-based recipe. the recipe is very simple and quick to make without much hassle and can be finished with all the basic ingredients available in your kitchen.
there is myriad recipes collection under the bouquet of baby potatoes which is known the simplicity and its taste. i have posted quite a few recipes till now with baby potatoes and this is my personal favourite. i make it often to my lunch and dinner as a side and my personal favourite is dal rice combo with spicy small potato fry. in addition to it, i extend this recipe with leftover pan-fried baby potatoes to make a gravy based recipe. you can have any gravy based sauce to extend it. the best sauce for it is the yoghurt based sauce like kashmiri dum aloo recipe. yet you can use any types of sauce like onion and tomato or just tomato-based sauce.
furthermore, i would like to highlight some tips, suggestions and variations to baby potato fry recipe. firstly, i would like to emphasis on the usage of baby potatoes. there are many variants in the market which does claim about the baby potatoes, but for this, it has to be really small in shape. secondly, the recipe has to be very spicy and the coating has to be applied across the baby potatoes. hence when pan-frying it, make sure you stir it thoroughly. lastly, you should be pan-frying the baby potatoes in a small to medium flame so that it gets cooked evenly and also it becomes moist at the centre.

Ingredients
for pressure cooking:
- 2 cup water
- 9 baby potato / aloo
- 1 tsp salt
for masala:
- 2 tbsp oil
- 1 tsp mustard
- ½ tsp urad dal
- ½ tsp cumin / jeera
- pinch hing / asafoetida
- few curry leaves
- ½ onion, finely chopped
- 1 tsp ginger garlic paste
- ¼ tsp turmeric
- ½ tsp kashmiri red chilli powder
- ½ tsp coriander powder
- ½ tsp garam masala
- ½ tsp aamchur
- ½ tsp salt
- 2 tbsp coriander, finely chopped
Instructions
- firstly, in a pressure cooker take 2 cup water and steam 9 baby potato with 1 tsp salt for 2 whistles.
- cool completely and peel the skin of the potato.
- in a large kadai heat, 2 tbsp oil add boiled potato.
- saute and roast until the potato turns golden brown.
- keep the roasted potato aside.
- in the same oil splutter 1 tsp mustard, ½ tsp urad dal, ½ tsp cumin, pinch hing and few curry leaves.
- also, saute ½ onion and 1 tsp ginger garlic paste well.
- further, add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp coriander powder, ½ tsp garam masala, ½ tsp aamchur and ½ tsp salt.
- now add roasted potato.
- saute on low flame until spices are coated well.
- finally, add 2 tbsp coriander and enjoy baby potato fry.

- firstly, make sure to take baby potatoes else cube them into pieces.
- also, roast on low to medium flame until it turns golden brown.
- additionally, roast the spices on low flame to prevent from burning.
