furthermore, i would like to wrap up with some tips, suggestions, variants to make a perfect aloo tamatar ki sabji recipe. firstly, in this recipe i have used fresh ripe an juicy tomatoes for ideal gravy sauce. i would recommend the same to use, instead of canned tomatoes puree. secondly, you can customize the choice of veggies as per your preference. as a matter of fact you can add combination of veggies with potato as its base. lastly, if you wish to hasten the cooking process, you can pressure cook the potatoes before using it in this recipe. however be careful as you do not want to mash it and the potatoes should hold its shape.

Ingredients

  • 2 tbsp oil
  • 1 bay leaf
  • 1 inch cinnamon
  • 2 pods cardamom
  • pinch hing / asafoetida
  • 1 tsp kaduri methi
  • 1 tsp cumin / jeera
  • 2 tbsp coriander, finely chopped
  • 1 onion, finely chopped
  • 1 tsp ginger garlic paste
  • ½ tsp turmeric
  • 1 tsp kashmiri red chilli powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • 1 tsp salt
  • 1 tomato, finely chopped
  • cup water
  • 2 potato / aloo, boiled
  • 2 tbsp coriander, finely chopped

Instructions

  • firstly, in a large kadai heat 2 tbsp oil and saute 1 bay leaf, 1 inch cinnamon, 2 pods cardamom, pinch hing, 1 tsp kaduri methi, 1 tsp cumin and 2 tbsp coriander.
  • now add 1 onion and saute well. saute until onions turn golden brown.
  • further add 1 tsp ginger garlic paste and saute well.
  • keeping the flame on low add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder, ½ tsp garam masala and 1 tsp salt.
  • saute on low flame until spices turn aromatic.
  • add 1 tomato and saute well until tomatoes turn soft and mushy.
  • further mash 2 boiled potato slightly.
  • mix well making sure all the spices are well combined.
  • now add 1-2 cup water and stir adjusting consistency as required.
  • cover and simmer for 10 minutes making sure flavours are absorbed well.
  • finally, add 2 tbsp coriander and enjoy aloo tamatar ki sabji with phulka or poori.
