i have posted a lot of custard recipes till now in my blog, and i was getting a lot of requests to post a basic custard powder recipe. moreover, the store-bought are generally expensive for the minimal set of ingredients it contains. hence i thought of posting this basic recipe with the available ingredients at home. in other words, i have used the combination of powdered sugar, cornflour and milk powder for this recipe. however, the store-bought contains more ingredient like wheat maize and artificial flavour enhancer. moreover, some even have egg in it, to provide more creaminess. particularly, these ingredients are not required for a basic one and hence i have skipped it to make a basic homemade custard flour.

furthermore, i would like to highlight some more important tips, suggestions and variations to homemade custard flour. firstly, even though the sugar and milk powder is a key ingredient for this flour. but the corn starch or corn flour plays a major role in this recipe. it helps to thicken the custard milk and achieves more creaminess. secondly, you may experiment with the flavours you add to it. i have used a basic vanilla extract, but you may also add strawberry essence or cocoa powder for a chocolate flavour. for strawberry, you may need to add red food colour and vanilla essence for cocoa powder. lastly, you need to store this in an airtight container for a longer and better shelf life.

Ingredients
  

for custard powder:

  • 1 cup sugar
  • 1 tsp vanilla extract
  • ½ cup milk powder
  • ½ cup corn flour
  • ¼ tsp yellow food colour

for dry fruits custard:

  • ¼ cup custard powder, prepared
  • 4 cup milk
  • 2 tbsp raisins / sultanas
  • 10 pistachios, chopped
  • 5 almonds, chopped
  • 5 dates, chopped
  • 5 cashew, chopped

Instructions
 

  • firstly, in a mixi take 1 cup sugar and 1 tsp vanilla extract.
  • blend to a fine powder. vanilla flavoured powdered sugar is ready.
  • transfer the powdered sugar over a sieve.
  • add ½ cup milk powder, ½ cup cornflour and ¼ tsp yellow food colour.
  • sieve the mixture making sure there are no lumps.
  • mix all the ingredients well, and homemade custard powder is ready.
  • finally, store the custard powder in an airtight box up to the shelf life of milk powder.

how to make dry fruit custard:

  • firstly, in a large bowl take ¼ cup custard powder and 4 cup milk.
  • whisk well making sure there are no lumps.
  • transfer the milk into large kadai.
  • keeping the flame on medium, stir continuously.
  • cook until the milk thickensns. it takes approximately 13 minutes to thicken.
  • scrape the sides and custard milk is ready.
  • cool completely, transfer to a large bowl. cover and refrigerate for 30 minutes.
  • after 30 minutes, the custard milk will turn even thicker and creamier.
  • add 2 tbsp raisins, 10 pistachios, 5 almonds, 5 dates and 5 cashew.
  • mix well and finally, dry fruits custard is ready using homemade custard powder.
