The bread is prepared with whole wheat flour dough to which spiced grated gobi mixture is stuffed. Moreover, there are several recipes for gobhi parantha which mainly differ in their stuffing.
I have posted several paratha recipes till now but this simple gobi paratha recipe was long due. I overlooked and I assumed that I had already posted this paratha recipe. In short, I started getting several requests for this exotic Indian flatbread. Initially, I was surprised, but soon realized, it was not posted on my website. There are many different types of Cauliflower recipes, but I followed the basic and authentic recipe. In this recipe, I have used just cauliflower stuffing, but this can be easily extended by adding other veggies. You may add onions, potatoes, and even capsicum. perhaps I will share that recipe soon.
Some important tips and suggestions for a perfect and yummy gobhi ka paratha recipe. Firstly, the dough needs to be kneaded very smoothly so that the spiced cauliflower is easily stuffed. Yet do not make it super smooth as the stuffing may ooze out while shaping and rolling it. Secondly, and more importantly, apply butter or ghee on the paratha while frying after you have roasted the paratha once. This ensures the paratha to cook perfectly otherwise it will turn oily and half-cooked. Lastly, I have added red chilli powder to gobi stuffing, but additionally, green chilies too can be added to make it spicier.

About Gobi Paratha
An easy and simple stuffed paratha recipe prepared with wheat flour dough, stuffed with raw cauliflower grate, and mixed herbs and spices. Cauliflower paratha most commonly known as Gobi Paratha is a staple food from North India and is often served as an alternative to Aloo Paratha. It is typically loaded with spice and savory stuffing and hence does not require any additional sides and condiments. However, it tastes even better when served with mint or yogurt raita or with any desired curries and sabzi.
There are many different ways to make this simple and healthy Gobi Paratha. The most common and popular way is to make the stuffing with raw gobi grate and mix it with spices and herbs. However, there is another popular way to cook the cauliflower first and then mash it and prepare the stuffing. In addition, the cooked cauliflower can also be mixed directly into the wheat dough. This is much easier and simpler to cook. Lastly, in the place of wheat flour, plain or maida flour can also be used to make it more tasty.

Gobi Paratha Recipe | Cauliflower Paratha - Tips & Tricks
Ingredients
- ½ gobi / cauliflower / gobi, grated
- ½ tsp garam masala
- ½ tsp cumin powder
- ½ tsp coriander powder
- ½ tsp aamchur
- ½ tsp salt
- 1 inch ginger, grated
- 2 chilli, finely chopped
- 2 tbsp coriander, finely chopped
- !for dough:
- 2 cup wheat flour
- ½ tsp salt
- ½ tsp ajwain
- water, for kneading
- oil, for roasting
Instructions
- Firstly, grate ½ gobi coarsely.
- In a bowl take 2 cup grated gobi.
- Add ½ tsp garam masala, ½ tsp cumin powder, ½ tsp coriander powder, ½ tsp aamchur and ½ tsp salt.
- Also add 1 inch ginger, grated, 2 chilli and 2 tbsp coriander.
- Mix well making sure all the spices are well combined.
- Further to prepare the dough, in a large bowl take 2 cup wheat flour, ½ tsp salt, ½ tsp ajwain and mix well.
- Add water as required and knead to smooth and soft dough.
- Now pinch a ball-sized dough and roll about 4 inches in diameter.
- Place a ball-sized prepared gobi stuffing in the centre.
- Take the edge and start pleating bringing it to the centre.
- Also, join the pleats together and secure tight pinching off excess dough.
- Sprinkle some wheat flour and roll slightly thick.
- On a hot tawa place the rolled paratha and cook for a minute.
- Furthermore, flip the paratha when the base is partly cooked (after a minute).
- Also, brush oil/ghee and press slightly. Flip again once or twice till both sides are cooked properly.
- Finally, serve hot Gobi Paratha with sauce, raita or pickle.

Notes
- Firstly, make sure to prepare the stuffing just before making paratha. Else the gobi will release moisture and will be difficult to roll.
- Also, the paratha must be roasted well so the gobi will get cooked well.
- Additionally, roasting the paratha with ghee gives it a nice flavour.
- Additionally, you can add ¼ cup maida to the dough, to make paratha super soft.
- Finally, Gobi Paratha Recipe tastes great when stuffing is made masaledar.

no..don’t boil it..just saute it for 5 mins as i mentioned in the step
