as i was explaining earlier, i have prepared this recipe very similar to the meat curry or chicken/lamb curry. basically, i have included a step to marinate these boiled soya chunks with curd, ginger garlic paste and lots of spice powders. this would help to soften/tender and also injects all the spice flavours to the meal maker. generally, we do not marinate vegetables or paneer, but this step ensures the curry is loaded with flavour and spice heat. as a matter of fact, i have posted another variant of the soya chunks curry which is similar to any veg or paneer curry. there is no marination with curd and spices and follows the traditional way of preparing the curry. to be honest, once you follow this recipe, you may never go back to the old way. especially the meal maker absorbs the marinated sauce to make it a spice rich curry.

furthermore, some more additional tips, suggestions and variants to the soya chunks recipe. firstly, even before starting the recipe, you need to make sure the soya chunks are properly boiled in clean water. it may contain a lot of dirt in it and boiling helps to remove that dirt and also reduce the strong smell from the meal maker. secondly, while preparing the gravy, i have used finely chopped onions with tomato puree. this would help to hasten the cooking process. but you can also prepare it with finely chopped tomatoes if you like to get a thick and rough texture to the gravy. lastly, if you feel the spice heat level is too much to handle, you may lower it by adding cooking cream or beaten yoghurt. this should be added only once the gravy is prepared and the flame is turned off.

Ingredients
  

for boiling soya:

  • water, for boiling
  • 1 tsp salt
  • cup soya chunks

for marination:

  • ½ cup curd, thick
  • 1 tsp ginger garlic paste
  • ½ tsp chilli powder
  • ¼ tsp turmeric
  • 1 tsp garam masala
  • ½ tsp coriander powder
  • ½ tsp cumin powder
  • 1 tsp kasuri methi
  • ½ tsp salt

for gravy:

  • 2 tbsp oil
  • 2 bay leaf
  • 5 cloves
  • 2 pods cardamom
  • 1 inch cinnamon
  • 1 tsp cumin
  • 1 onion, finely chopped
  • ¼ tsp turmeric
  • ½ tsp chilli powder
  • ½ tsp coriander powder
  • cup tomato puree
  • ½ cup cashew paste
  • ½ tsp salt
  • 2 tbsp coriander, finely chopped

Instructions
 

how to prepare soya chunks for curry:

  • firstly, in a large vessel take enough water.
  • add 1 tsp salt and get to a boil.
  • now add 1½ cup soya chunks and boil for 8 minutes or until the soya softens.
  • drain off and rinse in cold water.

how to marinate soya chunks:

  • squeeze off the water from soya chunks and transfer to a large bowl.
  • add ½ cup curd, 1 tsp ginger garlic paste, ½ tsp chilli powder, ¼ tsp turmeric.
  • also, add 1 tsp garam masala, ½ tsp coriander powder, ½ tsp cumin powder, 1 tsp kasuri methi and ½ tsp salt.
  • mix well making sure everything is well combined.
  • cover and allow to marinate for 30 minutes.

how to prepare meal maker curry:

  • firstly, in a large kadai heat 2 tbsp oil. add 2 bay leaf, 5 cloves, 2 pods cardamom, 1 inch cinnamon and 1 tsp cumin.
  • saute on low flame until the spices turn aromatic.
  • now add 1 onion and saute until the onions turn golden brown.
  • keeping the flame on low, add ¼ tsp turmeric, ½ tsp chilli powder and ½ tsp coriander powder.
  • saute on low flame until the spices turn aromatic.
  • now add marinated soya and cook for 2 minutes.
  • further, add 1½ cup tomato puree. to prepare puree, blend 2 ripened tomatoes to smooth paste without adding water.
  • cook until the tomato puree thickens slightly.
  • now add ½ cup cashew paste, ½  tsp salt and mix well. to prepare cashew paste, soak 10 cashews in ½ cup hot water and blend to a smooth paste.
  • cover and continue to cook until the oil separated from the curry.
  • adjust the consistency of gravy adding water as required. also, add 2 tbsp coriander and mix well.
  • finally, enjoy meal maker curry with roti or paratha.
