palak cutlet recipe | palak tikki recipe | spinach potato cutlet with detailed photo and video recipe. an easy and interesting deep fried snack recipe made with spinach leaves and paneer cubes. the recipe is very similar to any cutlet recipe but has generous amount of palak puree with grated paneer. it can be easily served as evening snack or as a side dish to any meal and does not require any extra condiments.
well i have posted several cutlet or tikki recipes on my blog, but this recipe of palak cutlet is very unique. the main difference between this tikki with other tikki recipe is the usage of puree while making the cutlet recipe. without the puree, its just another cutlet recipe and does not have any significance. to be honest, you can make the same recipe with other leafy vegetables. apart from this leafy vegetable, i like the methi leaves which results in a bitter and savoury cutlet. anyway, i would like to say that having palak puree in a cutlet makes it a unique and flavoured snack recipe.
furthermore, i would like to add some more tips, suggestions and variations to palak cutlet recipe. firstly, i would heavily recommend to use palak puree and mix it with vegetable mash. having said that you can hasten the process by adding finely chopped palak leaves too. secondly, i have shaped the cutlet in a cylindrical cone shape which makes it attractive and appetite. having said that, you can use any shaper to shape it as per the preference. lastly, you can pan fry or even shallow fry these cutlets to make it healthy snack. having said that deep frying these would yield more tastier ones.

Ingredients
for cutlet mixture:
- 3 tsp oil
- 3 chilli
- 1 inch ginger paste
- 1 bunch palak / spinach, chopped
- 3 potato, boiled & mashed
- ½ cup paneer / cottage cheese, grated
- ½ cup bread crumbs
- 1 tsp coriander powder
- ¼ tsp cumin powder
- ½ tsp garam masala
- ½ tsp aamchur / dry mango powder
- 2 tbsp coriander, finely chopped
- ½ tsp salt
other ingredients:
- 2 tbsp corn flour
- 1 tbsp maida
- ¼ tsp chilli flakes
- ¼ tsp salt
- ½ cup water
- 1 cup bread crumbs
Instructions
preparation of cutlet mixture:
- firstly, in a large kadai heat 3 tsp oil and saute 3 chilli and 1 inch ginger paste.
- add 1 bunch palak and saute until palak shrinks.
- cool completely and blend to smooth paste without adding any water.
- transfer the palak paste into lage bowl and add 3 potato.
- also add ½ cup paneer and ½ cup bread crumbs.
- now add 1 tsp coriander powder, ¼ tsp cumin powder, ½ tsp garam masala, ½ tsp aamchur, 2 tbsp coriander and ½ tsp salt.
- combine well making sure the spices are well combined.
- mix well making a non-sticky dough. if the dough is still sticky, add 1 tbsp breadcrumbs and mix well. this helps to absorb moisture.
- now prepare maida paste by mixing, 2 tbsp corn flour, 1 tbsp maida, ¼ tsp chilli flakes and ¼ tsp salt.
- make a smooth lump free batter by adding ½ cup water.
frying cutlet:
- further, take a ball sized vegetable mixture, and roll cylindrical shape.
- dip in maida paste coating all over.
- then roll in breadcrumbs. make double coating to get a crispy outer layer.
- now deep fry in hot oil or bake in preheated oven at 180 degree celcius for 15 minutes.
- stir occasionally, until it turns golden brown and crisp. drain over kitchen paper to remove excess oil.
- finally, enjoy palak cutlet with tomato sauce.
