as i mentioned earlier, the recipe for spinach cheese balls recipe is very simple and can be prepared in jiffy. the recipe begins with sautéing the spinach leaves with onion, ginger and garlic. one it cooled down, it is grounded to a smooth puree with a flowing consistency. it is later mixed with breadcrumbs, corn flour and salt. add the breadcrumbs accordingly so that it forms dough and you can easily shape it. before shaping it to spinach balls, mozzarella cubes are placed in between and shaped to round balls. try to shape it without any cracks and has a smooth texture. it is now ready to deep fry or bake these balls, but make sure to fry them on medium flame.

Ingredients
  

  • 2 tsp oil
  • 1 clove garlic, chopped
  • 1 inch ginger, chopped
  • 2 tbsp onion, finely chopped
  • 1 green chilli
  • 2 cup palak / spinach, roughly chopped
  • ½ cup bread crumbs
  • 2 tbsp corn flour
  • ¼ tsp salt
  • 6 cubes cheese, mozzarella / cheddar
  • oil for deep frying

Instructions
 

  • firstly, in a large kadai heat 2 tsp oil and saute 1 clove garlic, 1 inch ginger, 1 green chilli and 2 tbsp onion.
  • now add 2 cup palak and saute till the palak shrinks.
  • cool down the mixture completely, and transfer to the blender.
  • add water as required and blend to smooth paste. make sure not to add more water.
  • transfer the palak puree into large mixing bowl.
  • add in ½ cup bread crumbs, 2 tbsp corn flour and ¼ tsp salt.
  • combine well to form a dough. add more breadcrumbs if the dough is watery.
  • now grease hands with oil and take a ball sized dough.
  • flatten by pressing gently.
  • now place a small cube sized cheese (mozzarella / cheddar) and get the edges together.
  • seal well and make a ball without any cracks. else cheese will melt and create mess while baking or frying.
  • further deep fry in medium hot oil or bake at 180 degree celsius for 15-20 minutes.
  • stir occasionally without making any cracks on cheeseballs and till the cheese balls turn crisp.
  • finally, serve palak cheese balls / spinach cheese balls with tomato sauce.
