furthermore, some easy and important tips, suggestions and variations with stuffed karela recipe. firstly, in this recipe, i have used a tender and small-sized bitter gourd which is perfect for stuffing and with serving size. but this is not mandatory and it may be difficult to find and hence you can fall back with bigger ones. secondly, while making a cavity in bitter gourd, i have removed the seeds and skin from bitter gourd. this helps to reduce and also evenly distribute the bitterness. moreover, i have reused the seeds and mixed it with masala which is optional and can be ignored if you want to reduce the bitterness further. finally, do not forget to wrap it up with a toothpick or thread before frying.

Ingredients

for marination:

  • 10 small karela / bitter gourd
  • 1 tbsp salt
  • 2 cup water

for masala:

  • 2 tbsp coriander seeds
  • 1 tsp cumin / jeera
  • 1 tsp fennel / saunf
  • ¼ tsp fenugreek / methi
  • ¼ tsp turmeric
  • 2 tbsp aamchur / dry mango powder
  • 1 tsp  kashmiri red chilli powder
  • 3 tsp oil
  • pinch hing / asafoetida
  • 1 onion, finely chopped
  • 1 tsp ginger garlic paste
  • 1 tsp salt
  • 2 tbsp water

other ingredients:

  • 2 tbsp oil
  • pinch hing / asafoetida
  • thread to tie

Instructions

  • firstly, heat oil and saute 1 onion and saute well.
  • also, add 1 tsp ginger garlic paste and saute well.
  • add in scraped skin and seeds and saute well until it is cooked completely.
  • now add prepared masala powder and 1 tsp salt.
  • saute until the spices turn aromatic.
  • add in 2 tbsp water and mix until the stuffing turns moist.
  • clean off the karela completely, and stuff the prepared stuffing into it.
  • tie the karela with a piece of thread or use floss to prevent stuffing from coming oit while frying.
  • heat 2 tbsp oil and add pinch hing.
  • add in stuffed karela and roast for 5 minutes.
  • cover and simmer for 20 minutes stirring occasionally.
  • cook until the karela is cooked completely without burning.
  • finally, enjoy bharwa karela with hot steamed rice or roti.

  1. firstly, in scrape the skin of bitter gourd and slit in the centre.

  2. with the help of back of the spoon, scrape off the seeds.

  3. place the bitter gourd into a large bowl.

  4. sprinkle in 1 tbsp of salt and rub well.

  5. rest for 30 minutes or until the bitterness is reduced.

  6. meanwhile prepare the masala by roasting 2 tbsp coriander seeds, 1 tsp cumin, 1 tsp fennel and ¼ tsp fenugreek.

  9. add in ¼ tsp turmeric, 2 tbsp aamchur and 1 tsp chilli powder.

  11. in a large kadai heat 3 tsp oil and pinch hing.

  • firstly, use small karela as they cook faster and taste good.
  • also, prepare a spicy masala stuffing to balance the bitterness.
  • furthermore, adding seeds and skin of karela to the stuffing makes it slightly bitter.
  • additionally, marinate the karela with salt to reduce the bitterness.
