tandoori momos recipe | how to make tandoori momo in pan with detailed photo and video recipe. a fusion of authentic nepali momos recipe with our own popular punjabi cuisine with tandoori gravy. savoury dumplings are always good to party starters or snacks but tandoori based momos make it even more flavorful. these momos are generally soaked and marinated in the tandoori sauce later baked in tandoori oven.
i have shared quite a few momos recipes including a wheat flour based momos. but i have developed a special interest in these fiery bright red coloured spicy tandoori momos recipe. as matter of fact, i wasn’t aware of such fusion recipe and was happy with the traditional classic nepali steamed momos. my first encounter with this recipe was during my recent trip to delhi which i had planned long back for the obvious reason to explore delhi’s street food. but i was really surprised to see tandoori momo option in most of the street vendors and posh fine dine restaurants menu. i personally liked the malai tandoori momos recipe in of the street vendors but in this post, i have shared a basic version of tandoori momo.
the recipe does not have much-complicated steps, yet some tips, recommendations and serving ideas for tandoori momos recipe. firstly, in this recipe post, i have used the simple vegetable-based stuffing for the momos. but this can be easily extended to any meat, paneer or combination of both as per your preference. secondly, i have used all purpose flour or maida to prepare the momos wrapper. alternatively, you can also prepare it with wheat flour to make it more healthy and less gluten. finally, you can serve these as it without any condiments or side dish. but it also tastes great when served with dahi chutney, mint sauce or momos chutney. this makes it a unique fusion recipe and can be served as it is without any side dish to it.

Ingredients
for dough:
- 1½ cup maida / plain flour / all purpose flour
- ¼ tsp salt
- 1 tsp oil
- ½ cup water
for stuffing:
- 2 tsp oil
- 1 clove garlic, finely chopped
- ½ onion, finely chopped
- 1 carrot, grated
- 2 cup cabbage, grated
- ½ tsp pepper, crushed
- ½ tsp salt
- 1 tbsp coriander, finely chopped
for tandoori marination:
- ½ cup curd / yogurt, thick
- 1 tsp ginger garlic paste
- ¼ tsp turmeric
- 1 tsp kashmiri red chilli powder / lal mirch powder
- ½ tsp garam masala
- 1 tsp kasuri methi
- 1 tsp lemon juice
- 1 tsp oil
- ¼ tsp salt
other ingredients:
- 2 tbsp oil
- 2 pieces red-hot charcoal
- ½ tsp ghee / clarified butter
- ½ tsp chaat masala
- ½ tsp coriander, finely chopped
Instructions
- firstly, in a large cup take ½ cup curd.
- also add 1 tsp ginger garlic paste, ¼ tsp turmeric, 1 tsp chilli powder, ½ tsp garam masala, 1 tsp kasuri methi, 1 tsp lemon juice, 1 tsp oil and ¼ tsp salt.
- mix well making sure all the spices are combined well.
- coat the momos with prepared marination and rest for 1 hour.
- heat kadai with 2 tbsp oil and place the marinated momos.
- cook for 2 minutes on medium flame.
- flip over and cook all sides well.
- finally, serve tandoori momos sprinkled with chaat masala and coriander leaves.
how to make tandoori momos with step by step photo:
momos recipe:
- firstly, in a large mixing bowl take 1½ cup maida, ¼ tsp salt and 1 tsp oil. mix well.
- add ½ cup water and knead dough for 5 minutes.
- knead to a smooth and soft dough, and rest for 30 minutes.
- now in a large kadai heat 2 tsp oil and saute 1 clove garlic.
- also, saute ½ onion till they turn translucent.
- further, add 1 grated carrot and 2 cup grated cabbage.
- saute well till it shrinks slightly.
- now add ½ tsp pepper, ½ tsp salt and 1 tbsp coriander.
- mix well and allow to cool completely. momos stuffing is ready.
- after 30 minutes, take the prepared momos dough and knead well again for a minute.
- further, pinch a small ball and flatten.
- now dust with some maida and start to roll using a rolling pin.
- roll to almost medium thin circle. around 4 – 5 inch in diameter. make sure you roll from sides and keep the centre slightly thick.
- using a small cup, cut into a circle and brush water to sides.
- now place a heaped tbsp of prepared stuffing in the centre.
- start pleating the edges slowly and gather everything.
- press in middle and seal the momos forming a bundle.
- heat a steamer and arrange the momos in the tray without touching each other.
- furthermore, steam momos for 10-12 minutes or till shiny sheen appears over it.
- cool the momos completely, as they will be very delicate to touch.
tandoori momos recipe:
- firstly, in a large cup take ½ cup curd.
- also add 1 tsp ginger garlic paste, ¼ tsp turmeric, 1 tsp chilli powder, ½ tsp garam masala, 1 tsp kasuri methi, 1 tsp lemon juice, 1 tsp oil and ¼ tsp salt.
- mix well making sure all the spices are combined well.
- coat the momos with prepared marination and rest for 1 hour.
- heat kadai with 2 tbsp oil and place the marinated momos.
- cook for 2 minutes on medium flame. flip over and cook all sides well.
- now place a small cup in the centre and keep 2 pieces of red-hot charcoal.
- pour ½ tsp ghee and cover with a lid.
- allow to rest for 2-3 minutes, or till aroma is infused into momos.
- finally, serve tandoori momos sprinkled with chaat masala and coriander leaves.
notes:
- firstly, knead the dough well, else momos will be chewy.
- also, add grated paneer to the stuffing to enhance the flavour.
- additionally, if you have tandoor/oven then bake it more tandoori flavour.
- finally, tandoori momos recipe tastes great when prepared slightly spicy and served with momos sauce.
