i have always been a huge fan of dosa recipes and one of the dosa variety is always on my morning breakfast menu. basically, i make one dosa batter and try to utilise it for all kind of dosa variation. as a matter of fact, tuppa dosa is one such easy variation which i make it quite often. in other words, there is no extra procedure or step to make this dosa. you use the normal dosa batter and while roasting adds a generous amount of ghee on top of it. well, to be honest, you can make the same recipe with other toppings. perhaps you can use homemade butter, olive oil or even coconut oil as a topping. but the use of ghee is something irreplaceable and you may not get the same taste as ghee.
furthermore, i would like to add some more tips, suggestions, and variations to tuppa dosa recipe. firstly, as i mentioned earlier you can use any dosa batter for this recipe. however, i would heavily recommend using a batter that yields soft dosa. for instance, you would love it when made with set dosa batter, but avoid using masala dosa batter. secondly, while topping the ghee, you should ensure to add melted ghee and avoid adding thick ghee which you would not be able to spread it easily. lastly, once the dosa is prepared it has to be served immediately and avoid resting it. hot-hot dosa just melts in your mouth when served with spicy and tasty chutney recipe.

Ingredients
  

  • 2 cup idli rice
  • ½ cup urad dal
  • ½ tsp methi / fenugreek
  • water, for soaking & grinding
  • 1 cup poha / aval / flattened rice, thin
  • 2 tsp salt
  • ghee / clarified butter, for roasting

Instructions
 

  • firstly, in a large bowl take 2 cup idli rice, ½ cup urad dal and ½ tsp methi.
  • add enough water and soak for 5 hours.
  • drain off the water and transfer to the mixi or grinder.
  • blend to smooth paste in batches adding water as required.
  • in a bowl take 1 cup poha and rinse well.
  • blend to smooth paste adding water if required.
  • mix the rice-urad dal batter and poha paste well.
  • cover and ferment in a warm place for 8 hours.
  • after 8 hours, the batter has doubled in size. mix gently without disturbing the air bubbles.
  • further, add 2 tsp salt and mix well.
  • heat the griddle and pour a ladleful of batter.
  • spread out in a circular motion slightly thick than regular masala dosa.
  • also, pour 2 tsp ghee around over the dosa.
  • cover and roast the dosa to a golden brown from the bottom and completely cooked from the top in presence of steam.
  • finally, enjoy ghee dosa with chutney.

  • firstly, use fresh homemade ghee for good flavour.
  • also, roast the dosa in the presence of steam, else it will be uncooked.
  • additionally, adjust the consistency of batter for desired thickness of dosa.
  • finally, ghee dosa recipe tastes great when served hot.
