as i mentioned earlier, there are myriad types of dosa variants which mainly differs with its flavouring agent. out of these recipes, methi dosa variant is a unique one to be noted. by its appearance, it does not have any distinctive feature, but it does have a strong taste in it. the addition of fenugreek not only adds bitter taste to it, but also helps ferment the dosa batter. as matter of fact, i have not added urad dal to make the batter and hence there isn’t any fermenting agent. yet it ferments properly due to bitter taste added. in addition to it, the first bite may be awkward for you, but as you start consuming it, you would certainly start liking it.

anyway, i would like to highlight some of my tips, suggestions and variations to methi dosa recipe. firstly, as i mentioned earlier i have used only rice to make the dosa batter with fenugreek seeds. yet you can experiment the recipe further with rice and urad dal batter which should taste equally great. secondly, if you are living in a cold and dry place the fermentation process may take extra time. to hasten it, you can either store it in a preheated oven or direct in sun light. lastly, the ideal combination for this bitter dosa is to serve it with a spicy and savoury chutney or curry. when a spicy side, mixed with bitter dosa, it makes a nice combination.

Ingredients
  

  • 3 cup idli rice
  • 3 tbsp methi / fenugreek
  • water , for soaking and grinding
  • 2 tsp salt

Instructions
 

idli and dosa batter preparation:

  • firstly, in a large bowl soak 3 cup idli rice and 3 tbsp methi.
  • soak for 5 hours with enough water.
  • drain off the water and transfer to the blender or grinder.
  • blend to smooth batter adding water as required.
  • prepare slightly watery consistency batter as methi absorbs water and thickens batter.
  • ferment the batter for 8 hours or till it doubles.
  • mix the batter gently without disturbing air pockets.
  • add 2 tsp salt and mix gently. idli and dosa batter is ready.

methi idli or vendhaya idli preparation:

  • firstly, grease the idli plate with oil.
  • pour a ladleful of batter in each idli plate.
  • place the idli plate in steamer and steam for 10-15 minutes.
  • finally, enjoy methi idli with kurma or chutney.

methi dosa or vendhaya dosa preparation:

  • firstly, pour a ladleful of batter on hot tawa and spread gently forming slightly thick dosa.
  • sprinkle oil over dosa.
  • cover and cook for a minute or until the dosa is cooked completely.
  • finally, enjoy methi dosa with kurma or chutney.
