i am not a huge fan of indo chinese cuisine and i like indian style curries and rice variations. yet i have a special interest in noodles, perhaps due to the maggi noodles introduced to me during my school days. i generally end up making simple maggi noodles with vegetables in it. but i do get the craving for the asian style noodles too. especially the crunchy yet cooked vegetable in it due to the high flame cooking. in addition, the sauce used would nicely coat the individual noodles making it a perfect lunch or dinner meal. in addition to the asian sauces, i have added a hint of indian spices mixed with asian sauce. thus making it an ideal indo chinese recipe, meeting the native taste buds.

furthermore, some more additional tips suggestions and variations to the vegetarian chow mein recipe. firstly, vegetable chopping or cutting is very critical for this recipe. it has to be sliced lengthwise but thinly so that it can be tossed at high flame and gets cooked easily. moreover you can also add any choice of vegetables as per your preference. secondly, i would heavily recommend to use dry noodles and boil them to cook. avoid using the ready to wok noodles as they may break and turn mushy when tossed. lastly, if you do not like to add all the indian spices one by one, you can stick to just one garam masala. this should have slightly more effective than the other spices added, but it should be alright.

for boiling noodles:

  • water, for boiling
  • 1 tsp salt
  • 3 tsp oil
  • 3 pack noodles

for sauce:

  • 1 tsp corn flour
  • 1 tsp chilli powder
  • ¼ tsp cumin powder
  • ¼ tsp coriander powder
  • 1 tsp sugar
  • ¾ tsp salt
  • 2 tbsp soy sauce
  • 2 tbsp vinegar
  • 2 tsp oil
  • ¼ tsp pepper powder

for chowmein:

  • 2 tbsp oil
  • 3 clove garlic, finely chopped
  • 1 inch ginger, finely chopped
  • few spring onion, chopped
  • ½ onion, sliced
  • ½ green capsicum, sliced
  • ½ red capsicum, sliced
  • ½ carrot, julienne
  • ½ cup cabbage, shredded

  • firstly, in a large vessel take water.

  • now add 3 pack noodles and dip completely.
  • boil for 3 minutes, or refer to package instructions to know the cooking time.
  • separate the noodles and drain off.
  • rinse with cold water to stop cooking and turning noodles mushy.

what is chow mein sauce made of:

  • firstly, in a small bowl take 1 tsp corn flour, 1 tsp chilli powder, ¼ tsp cumin powder and ¼ tsp coriander powder.
  • also add 1 tsp sugar, ¾ tsp salt, 2 tbsp soy sauce and 2 tbsp vinegar.
  • further, add 2 tsp oil and ¼ tsp pepper powder. traditionally, sesame oil and oyster sauce is also added.
  • mix well making sure there are no lumps, chowmein sauce ready.
