mostly pudina rice and pudina chutney is prepared because of its great taste, it also has to offer several health benefits. mint pulao is highly recommended during indigestion as it is a good source of antioxidants and phytonutrients. secondly, it is also served for common cold or running nose problem.lastly, mint leaves are good source of vitamin and minerals. hence it helps a lot to improve the immunity and keeps safe from inflammation.

furthermore, some subtle variations to this amazing pudina recipe. firstly, adding vegetables to this recipe is optional and it could be prepared with just pudina-coconut paste and rice. moreover, it is also a open ended recipe in terms of adding vegetables. hence vegetables, like potato, beans, peas, carrots, cauliflower and even sweet corn. lastly, i have prepared it with basmati rice, but mint pulao can also be prepared with sona masuri rice too.

Ingredients
to blend:
  • fistful of mint leaves / pudina
  • fistful of coriander leaves
  • 3 cloves garlic
  • 1 inch ginger
  • 3 green chilli
  • ¼ onion
  • 2 tbsp coconut, fresh / desiccated
  • ¼ cup water
other ingredients:
  • 1-2 tbsp ghee / clarified butter
  • 1 tsp cumin seeds / jeera
  • ½ tsp black pepper
  • 1 bay leaf / tej patta
  • 6 cloves / lavang
  • 2 star anise
  • 1 inch cinnamon stick / dalchini
  • 10 cashews, cut half
  • ½ onion, thinly sliced
  • 1 tomato, finely chopped
  • ½ potato, cubed
  • 5 beans, chopped10 florets cauliflower / gobi
  • ¼ cup peas
  • 1 carrot, chopped
  • 1 cup basmati rice, soaked 20 minutes
  • 2 cups water
  • salt to taste
Instructions ( 1 cup =255 ml)
pudina masala paste recipe:
  1. firstly, in a small blender take pudina and coriander leaves.
  2. furthermore add garlic, ginger and green chilli.
  3. then add few slices of onions and coconut.
  4. then add water and blend to smooth paste.
pressure cooking pulao recipe:
  1. firstly in a cooker heat ghee, add cumin seeds and other spices.
  2. saute them on medium flame till they turn aromatic.
  3. further, add cashews and saute till they turn golden brown.
  4. also add sliced onions and saute.
  5. additionally, add chopped tomatoes and saute till they turn mushy.
  6. furthermore add vegetables.
  7. further, add prepared masala paste and saute.
  8. then add soaked basmati rice.
  9. saute them gently without breaking the grains.
  10. then add 2 cups of water.
  11. further add salt to taste.
  12. mix well and pressure cook for 2 whistles on medium flame.
  13. finally, serve hot pudina pulao.


how to make pudina rice or mint rice with step by step photo recipe:

pudina masala paste recipe:

  1. firstly, in a small blender take fistful of pudina.

  2. also add equal quantity of coriander leaves.

  3. furthermore add garlic, ginger and green chilli.

  4. then add few slices of onions. onions gives a nice flavour to pulao.

  5. also add coconut. coconut helps to make pulao more rich and tasty.

  6. then add ¼ cup of water and blend to smooth paste.

pressure cooking pudina pulao recipe:

  1. firstly in a cooker heat ghee.

  2. furthermore add cumin seeds.
    pudina pulao
  3. also add black pepper, bay leaf, cloves, star anise and cinnamon stick.

  4. saute them on medium flame till they turn aromatic.

  5. further, add cashews and saute till they turn golden brown.

  6. also add sliced onions and saute for 2 minutes.

  7. additionally, add chopped tomatoes and saute till they turn mushy.

  8. furthermore add vegetables of your choice. i have added carrot, potato, beans, gobi and peas.pudina pulao
  9. saute them for atleast 3-4 minutes.

  10. further, add prepared masala paste and saute the masala paste well. else there will be raw smell in pulao.

  11. then add soaked basmati rice. make sure to wash and soak basmati rice for atleast 20 minutes before pressure cooking.

  12. saute them gently without breaking the grains.

  13. then add 2 cups of water. always maintain 1:2 ratio of rice and water for non sticky pulao.

  14. further add salt to taste. make sure to taste and adjust the salt till they are just salty.

  15. mix well and pressure cook for 2 whistles on medium flame.

  16. then once the pressure is released, gently fluff the rice.

  17. finally, serve hot pudina rice with onion tomato raita.

notes:

  • firstly, make sure to add vegetables of your choice to make it more nutritious.
  • furthermore, always prepare pulao with ghee for more flavour.
  • additionally, adjust the quantity of green chilli depending on the spice level.
  • finally, to prepare perfect pudina rice always use good quality basmati rice.

    I love pudina rice but my family doesn’t actually like mild tastes of pudina plus coriander only which I used to do.Yoir recipe worked really well and everyone loved it including me.It is both spicy and mild. Thanks fkr the recipe.

  3. I just made this recipe. It’s awesome. I usually make Aloo Bath with the same pudina paste. But it tastes great with mixed vegetables too.

      • hi..the recipe is awesome..wanted to know the ratio should be 1:2 or 1:1.5 for cooker based ??..and should we be waiting till the pressure goes off or after 2 whistles ,should we blow off the whistle for the pressure to release?
        Earlier whenever I have tried to retain the pressure after 2 whistles(after the flame is off)..,the rice usually got sticky….

        • if you are cooking in cooker, always use 1:1.5 ratio.. and if you are adding too much vegetables then increase the ratio to 1:2…. (again it depends on quality of rice)
          pressure cook for 2 whistles on medium flame and open the cooker only after the pressure has released completely… you will get perfect pulao…
