boondi sweet recipe | mithi boondi | meethi boondi banane ki vidhi with detailed photo and video recipe. an easy and simple indian sweet recipe made with deep-fried chickpea flour pearls dipped in sugar syrup. it is an ideal dessert recipe which is not only made and served for festival but can also be served as a light dinner snack. the same recipe is further extended to make boondi ladoo by shaping it to like a ball.
i have posted a lot of sweet recipes till now in my blog, but this recipe of boondi sweet is very special to me. basically, it is one of the simple and easy indian sweet recipes i have made till now. it is made with just 3 ingredients plus oil to deep fry. in addition there is no hassle of shaping these boondi pearls. it is served very similar to khara boondi, but with sugar syrup which makes it one of the easy and simple indian sweet recipes. moreover, the equipment i used in this recipe is easily available in most of the indian kitchen. traditionally it is made with custom oil filter skimmer, but i have used generic skimmer and vegetable grater. hence you may use any one of the option to prepare this recipe.
furthermore, some more additional tips, suggestions and variations to boondi sweet recipe. firstly, the besan batter has to be slightly thin and not a thick batter as used in any deep fry snack. it should easily flow and drip from the skimmer so that it forms a round shape. secondly, the deep-frying step is very critical to get a round shape to the boondi pearls. it should not be either extremely hot or at low temperature while deep frying. lastly, the time preference for dipping in sugar syrup is completely up to the individual. you may dip it for 10 minutes or 60 minutes or even for 4 hours depending upon the sweetness level you desire.

Ingredients
for boondi:
- 1 cup besan / gram flour
- ¾ cup water
- ¼ tsp baking soda
- ¼ tsp saffron food colour
- oil, for frying
for sugar syrup:
- 1½ cup sugar
- 2 pods cardamom
- 1½ cup water
- ¼ tsp saffron food colour
Instructions
- firstly, to prepare sugar syrup, in a large kadai take 1½ cup sugar, 2 pods cardamom and 1½ cup water.
- stir and mix well until the sugar melts.
- now boil for 5 minutes or until the sugar syrup until it turns slightly sticky.
- add ¼ tsp saffron food colour and mix well. keep aside.
- to prepare boondi, in a large bowl take 1 cup besan and ¼ tsp saffron food colour. mix well.
- now add ¾ cup water in batches.
- mix well and beat for 5 minutes forming a smooth flowing consistency batter.
- now add ¼ tsp baking soda and mix well.
- to prepare boondi, pour the batter slowly over skimmer or grater, keeping the oil hot.
- stir occasionally, until the boondi turns golden and crisp.
- collect all the boondi and make sure to drain off the oil completely.
- transfer the boondi into warm sugar syrup and dip completely.
- cover and rest for 1 hour or overnight depending on sweetness you prefer.
- drain off over colander to remove excess sugar syrup.
- finally, meethi boondi or boodi sweet is ready to enjoy.

notes:
- firstly, make sure to check the consistency of the batter to get perfect pearl-like boondi.
- additionally, adding food colour is optional. however, i have used to make it look attractive.
- also, you can flavour sugar syrup with kewda water, saffron or rose water.
- finally, meethi boondi or boondi sweet recipe stays good for a week in an airtight container.
