dosa mix recipe | instant dosa mix recipe | multipurpose mtr dosa mix with detailed photo and video recipe. an easy and simple way to make your desired breakfast recipes with a dosa premix powder. basically, it follows the same ingredients as the traditional dosa recipe with rice and urad dal, but dry roasted and grounded to a fine powder without water. the premix main use is to make dosa recipes, but can also be used to make different types of breakfast like uttapam, appe and idli.
well, i have posted quite a few instant recipes till now, but this recipe of instant dosa mix is really handy. it’s not just because it can make really quick dosa recipe, but also a bouquet of recipes with it. even though the proportions are for a soft dosa, but a lot can be achieved from it. initially, my plan was to make a masala dosa premix, but it is very difficult to get the other recipes from it. for masala dosa, the batter has to yield a crisp roasted dosa and the combination is slightly different. especially the curd or yoghurt has to be skipped. hence i gave up the idea of masala dosa mix and pursued the multipurpose dosa mix recipe. in this post, i have shown several recipes but not the idli, but i am confident that you can also attempt idli with it.
furthermore, i would like to add some more additional tips, suggestions and variations to instant dosa mix recipe. firstly, i have added baking soda which may be an issue for some and hence can be replaced wit eno fruit salt. these fermenting agents are essential as we are skipping the natural fermentation process with the instant method. secondly, i have not attempted the natural fermentation process, but i am confident that if you leave the batter overnight it should ferment naturally. if you attempt this, then avoid adding baking soda as it is not required. lastly, in this mix, i have added poha which absorbs water quickly. hence, you may need to add more water once the batter is prepared and rested for a while.

Ingredients
- 1½ cup rice
- ½ cup urad dal
- 2 tbsp toor dal
- 2 tbsp chana dal
- ¼ tsp methi
- ½ cup poha, thin
- 2 tbsp rava / suji, coarse
- 1 tsp salt
- ½ tsp baking soda
Instructions
- firstly, in a pan take 1½ cup rice and dry roast on medium flame.
- roast until the moisture goes away.
- transfer to a plate and cool completely.
- now grind to slightly coarse powder. you can alternatively use store brought rice flour.
- take ½ cup urad dal, 2 tbsp toor dal, 2 tbsp chana dal and ¼ tsp methi.
- dry roast on medium flame until the moisture goes away.
- also add ½ cup poha and roast until the poha turns crisp.
- cool completely and transfer to the mixi.
- blend to fine powder.
- now transfer the dal powder to the rice flour bowl.
- also add 2 tbsp rava, 1 tsp salt and ½ tsp baking soda. in place of baking soda you can use eno as well.
- mix well combining all the ingredients well.
- finally, store instant dosa mix in an airtight container and use to prepare dosa, appe or uttapa.

- firstly, make sure to dry roast else the moisture in dal and rice will reduce the shelflife.
- also, adding poha is optional. if you make the dosa batter without poha, your dosa would be more crisper.
- additionally, if you want to skip baking soda you can ferment the batter overnight.
