well to be honest i am not a huge fan of pasta recipes and i generally prepare it for my husband lunch boxes or if i want to try something new. i avoid it as i feel cheese-based recipes are very addictive which makes you consume more calories. it can be a pasta or pizza recipe. but this recipe is a unique pasta recipe as it does not have a cheese addiction. it is made with a lot of vegetables in a vegetable broth. thus making it one of the healthy and nutrient-rich soup recipe. you can make this for your lite dinner or you can make it as an appetiser just before lunch and dinner as a weight loss recipe.
furthermore, some more additional tips, suggestions and variants to pasta soup recipe. firstly, there is no hard and fast rule to use penne pasta and you can use it as per your preference. you can use bow tie-shaped pasta, macaroni, linguine and even pappardelle. on top of that, you can also add grated cheese toppings for extra taste. secondly, you may add any type of vegetables to it to make it fibre rich. ensure to make it thinly sliced or diced so that it gets cooked easily. however, do not overcrowd it with lots of vegetables and keep it balanced. lastly, if you feel to have a thick soup you may add cornstarch just before you switch off the flame. this is not recommended as it may spoil the taste.

Ingredients
- 3 tsp olive oil
- 1 inch ginger, finely chopped
- 3 clove garlic, sliced
- 2 tbsp coriander
- ½ onion, finely chopped
- ½ carrot, chopped
- ¼ red capsicum, chopped
- 5 beans, chopped
- 2 tbsp sweet corn
- ¼ tsp pepper powder
- ½ tsp chilli flakes
- ½ tsp mixed herbs
- ½ tsp salt
- 4 cup water
- 1 cup pasta, bowtie
- 10 cherry tomato
- 2 tbsp spring onion, chopped
Instructions
- firstly, in a large wok heat 3 tsp olive oil. saute 1 inch ginger, 3 clove garlic and 2 tbsp coriander.
- now add ½ onion and saute slightly.
- further, add ½ carrot, ¼ red capsicum, 5 beans and 2 tbsp sweet corn.
- stir fry on high flame keeping the vegetables crunchy.
- now add ¼ tsp pepper powder, ½ tsp chilli flakes, ½ tsp mixed herbs and ½ tsp salt.
- stir fry for a minute until the spices turn aromatic.
- pour 4 cup water and get the water to a rolling boil.
- add in 1 cup pasta, 10 cherry tomato. i have used bowtie pasta, you can use the shape of your choice.
- boil for 10 minutes or until the pasta is cooked yet al dente.
- finally, add 2 tbsp spring onion enjoy pasta soup piping hot.
