veg bonda recipe | vegetable bonda recipe | mixed veg bonda with detailed photo and video recipe. a simple deep fried snack or dumplings prepared mainly with choice of mixed veggies coated with chickpea flour. it is an ideal tea time snack served as a street food with coconut chutney or tomato sauce but can also be extended as vada pav.
deep fried snacks are popular in my family and veg bonda is my husband’s favourite snack recipe. perhaps this recipe is the most requested recipe from him and i end up preparing very frequently. to be honest, each time when i prepare it, i try to improvise it and extend the recipe by adding choice of veggies. but the favourite and tasty one for my husband is the combination of potatoes and beetroots. he typically enjoys the mixed veg bonda with coconut chutney or mint chutney but it should equally taste good with tomato ketchup or chilli sauce. moreover the other best part of mixed vegetable bonda is you can easily prepare veg cutlets by shaping the left over vegetable mixture and deep frying. whenever i prepare these, i deliberately end up preparing more vegetable mixture so that i can prepare cutlets or tikki’s for snacks and breakfast.
well the the recipe is extremely simple without much complicated steps, yet some tips, suggestion and serving ideas for veg bonda recipe. firstly, as mentioned previously you cn add choice of veggies to this recipe. ideally you can add, beans, peas, beetroot, gobi, carrot and also potatoes to this recipe. secondly, add chat masala to the besan batter mixture and garam masala to vegetable mixture to make it more chatpata and spicy snack. lastly, deep fry these bonda’s in a medium flame for better results. the heat has to reach the inner part of veggies to cook it evenly. also as an alternative you can cook these bonda’s in a appe pan with less oil to make it more healthy.

Ingredients
for pressure cooking:
- ½ potato / aloo, cubed
- ½ carrot, cubed
- 5 beans, chopped
- ¼ cup beetroot, cubed
- 2 tbsp matar / peas
- ½ tsp salt
for batter:
- ¼ cup rice flour
- ¼ tsp turmeric / haldi
- 1 cup besan / gram flour
- ¼ tsp kashmiri red chilli powder / lal mirch powder
- ½ tsp chaat masala
- pinch of hing / asafoetida
- ¼ tsp salt
- ¼ tsp baking soda
- water as required
other ingredients:
- 3 tsp oil
- 1 tsp mustard / rai
- ½ tsp cumin / jeera
- ½ tsp urad dal
- few curry leaves
- 1 inch ginger, chopped
- 2 clove garlic, chopped
- 2 green chilli, finely chopped
- ½ onion, finely chopped
- ½ tsp turmeric / haldi
- 2 tbsp coriander, finely chopped
- ½ tsp garam masala
- ½ tsp chaat masala
- 1 tbsp lemon juice
- ¼ tsp salt
- oil for deep frying
Instructions
- firstly, steam cook ½ potato, ½ carrot, ¼ cup beetroot, 5 beans, 2 tbsp matar.
- in a kadai heat 3 tsp oil and splutter mustard, cumin, urad dal and curry leaves.
- also saute 1 inch ginger, 2 clove garlic, 2 green chilli and ½ onion.
- now add ½ tsp turmeric, ½ tsp garam masala, ½ tsp chaat masala and ¼ tsp salt.
- saute and mash the cooked vegetables for a minute.
- add in 2 tbsp coriander, 1 tbsp lemon juice and mix well.
- prepare a small sized ball from vegetable mixture.
- dip in prepared besan batter and deep fry in hot oil.
- finally serve veg bonda with tomato sauce or coconut chutney.
how to make veg bonda recipe with step by step photo:
- firstly, in a pressure cooker take 2 cups water and place a small bowl in it.
- in a bowl take ½ potato, ½ carrot, ¼ cup beetroot, 5 beans, 2 tbsp matar.
- also add ½ tsp salt and pressure cook for 4 whistles without adding any water in bowl.
- in another kadai heat 3 tsp oil and splutter 1 tsp mustard, ½ tsp cumin, ½ tsp urad dal and few curry leaves.
- also saute 1 inch ginger, 2 clove garlic and 2 green chilli for a minute.
- further add in ½ onion and saute well.
- now add ½ tsp turmeric, ½ tsp garam masala, ½ tsp chaat masala and ¼ tsp salt. saute on low flame without burning the spices.
- once the pressure released from the pressure cooker, take off the cooked vegetables and drain off the water (if any).
- saute the cooked vegetables for a minute.
- also mash the vegetables making sure there are no lumps.
- add in 2 tbsp coriander, 1 tbsp lemon juice and mix well. keep aside.
- in a small bowl prepare besan batter by mixing 1 cup besan, ¼ cup rice flour, ¼ tsp turmeric, ¼ tsp chilli powder, ½ tsp chaat masala, pinch of hing, ¼ tsp salt and ¼ tsp baking soda.
- mix well making sure all the spices are mixed well.
- add in ½ cup water, and prepare a smooth thick batter.
- prepare a small sized ball from the prepared vegetable mixture.
- dip in prepared besan batter and coat well.
- deep fry in hot oil stirring occasionally.
- fry on medium flame till the bonda turns golden and crisp.
- finally serve veg bonda with tomato sauce or coconut chutney.
notes:
- firstly, steam cook the vegetables without adding any water. else vegetables will absorb water.
- also add vegetables of your choice to make bonda more nutritious.
- additionally, prepare thick besan batter, else the bonda will not have coating.
- finally, veg bonda taste great when served hot and crispy.
