i am a huge fan of simple and easy recipes. it is not just because of the time it takes to prepare, but also the simplicity it carries with it. i always believe the best things come out of simple things. for instance, this recipe hardly takes minutes to prepare it, yet tastes so good with almost any flatbread or any type of rice variants. however, you cannot compare this recipe to premium paneer based kadai paneer or palak paneer, but can easily challenge any aloo or gobi based curries. there is no chopping or dicing of the veggies and moreover, no heat required to fry or sautee the vegetables. if you have some leftover yoghurt or do not have that energy to cook a full-fledged meal, dahi ka tadka is your go-to curry.

furthermore, i would like to add some more tips, suggestions and variations to the popular dahi tadka recipe. firstly, in this recipe, i have used just finely chopped garlic to add the flavour to the curry. having said that, you may add almost any veggies to this curry. for instance, you may use potatoes, eggplant, beans and even carrots. you may need to fry it and partially cook it before using it. secondly, sour curd is most preferred for this recipe as it adds the sour taste to the recipe. an ideal curry is with a balanced flavour and taste. as we are not using tomatoes, it is better to use sour curd. lastly, the curd has to be whisked before it is used in this recipe. whisked curd helps to get the desired consistency and binds well when tadka is added.

Ingredients
  

  • 2 cup curd
  • ½ tsp salt
  • 2 tbsp ghee / clarified butter
  • 10 clove garlic, chopped
  • 1 tsp cumin
  • ½ tsp mustard
  • pinch hing
  • 2 dried red chilli
  • few curry leaves
  • ¼ tsp cumin powder
  • ½ tsp coriander powder
  • ¼ tsp turmeric
  • 1 tsp chilli powder
  • 2 tbsp coriander, finely chopped

Instructions
 

  • firstly, in a large bowl take 2 cup curd and ½ tsp salt.
  • whisk and mix well making sure the curd turns smooth texture. keep aside.
  • in a pan heat 2 tbsp ghee and saute 10 clove garlic until it turns golden brown.
  • now add 1 tsp cumin, ½ tsp mustard, pinch hing, 2 dried red chilli and few curry leaves.
  • splutter the tempering making sure to keep the flame on medium.
  • turn off the flame and add ¼ tsp cumin powder, ½ tsp coriander powder, ¼ tsp turmeric and 1 tsp chilli powder.
  • saute until the spices turn aromatic.
  • pour the tempering over curd and mix well.
  • also add 2 tbsp coriander and mix well-combining everything well.
  • finally, enjoy dahi tadka with roti or paratha.
