while some might be aware of this recipe, but some may wonder how different from the traditional vegetable kurma recipe. firstly, there is a subtle difference with its spice level and this recipe is considered to be less spice. the main reason being the curry is served for the morning breakfast which is always less in spice temperature. the other major difference is the consistency. kuruma for dosa is always thin in consistency and thus can be served like sambar for dosa and idli. moreover, i have also introduced a significant to this recipe. i have used red chillies as an alternative to green chillies. this helps the curry to have bright red colour and making it more attractive and appetite when served with white coloured dosa and idli recipes. having said that it is not mandatory and green chillies can be used for this recipe.

furthermore, i would also like to mention some tips, suggestions and variations for dosa kurma recipe. firstly, the kurma can be made with different types of finely chopped vegetables but do not overcrowd with too many veggies. ideally, potatoes, carrots, capsicum, beans, peas and sweet corn shells are perfect for this recipe. secondly, the gravy is not just limited to idli and dosa and can also be shared with flatbreads like roti and naan recipes. if you are planning to serve it for both, you may well increase the spice level so that it caters both. lastly, in this kurma, i have added fennel seeds or saunf which is the main ingredient for traditional ones. well, there isn’t any harm if you skip these and hence you may skip if you wish too.

Ingredients
  

for masala paste:

  • 1 tbsp oil
  • 1 inch ginger
  • 2 clove garlic, crushed
  • ½ onion, sliced
  • 1 tomato, chopped
  • ½ coconut, grated
  • 3 dried red chilli
  • 1 tsp coriander seeds
  • 1 tsp poppy seeds / khus khus
  • 1 tsp fennel / saunf
  • 1 tbsp putani / roasted gram dal
  • ½ cup water

for kurma:

  • 2 tbsp oil
  • ½ inch cinnamon
  • 3 pod pod cardamom
  • few curry leaves
  • ½ onion, finely chopped
  • 1 chilli, slit
  • ½ tomato, finely chopped
  • ¼ tsp turmeric
  • ¾ tsp salt
  • 3 cup water
  • 2 tbsp coriander, finely chopped

Instructions
 

  • firstly, in a pan heat 1 tbsp oil and saute 1 inch ginger and 2 clove garlic.
  • add ½ onion and saute until it softens.
  • further add 1 tomato and saute until it turns soft and mushy.
  • now add ½ coconut, 3 dried red chilli, 1 tsp coriander seeds, 1 tsp poppy seeds, 1 tsp fennel and 1 tbsp putani.
  • saute for a minute until it turns aromatic.
  • cool completely and transfer to the blender.
  • blend to smooth paste adding ½ cup water. keep aside.
  • now in a large kadai heat 2 tbsp oil and saute ½ inch cinnamon, 3 pod cardamom, few curry leaves.
  • add ½ onion, 1 chilli and saute until it softens slightly.
  • further add ½ tomato and saute until it turns soft and mushy.
  • add in prepared masala paste, ¼ tsp turmeric and ¾ tsp salt.
  • saute for 2 minutes or until masala turns aromatic.
  • now add 3 cup water or as required adjusting the consistency.
  • simmer and boil for 5 minutes.
  • also add 2 tbsp coriander and mix well.
  • finally, enjoy dosa kurma recipe with dosa, idli or chapathi.

  • firstly, make sure to roast the spices on low flame to prevent from burning.
  • also, if serving kurma with chapathi then keep the consistency slightly thick.
