dhebra recipe | methi na dhebra | gujarati bajra dhebra with step by step photo and video recipe. thepla or spice roti bread is a very common type of bread prepared in most gujarati households. these are generally prepared with either combination of wheat flour, plain flour in addition to besan or chickpea flour. yet there are some other interesting gujarati bread recipes and methi na dhebra or fenugreek leaves loaded roti bread is one such variation known for its mixed bitter and savoury taste.

i will be honest with you. i am not a fan of bajra flour and roti prepared with these are my least favourite bread recipes. i basically feel it tasteless when compared to wheat or plain flour-based roti’s and bread. yet i have a special place for this dhebra roti recipe. perhaps it is because of the fenugreek leaves used in this recipe. addition to the fenugreek leaves, i have also added dry spices which would elevate the taste and flavour of this roti. i personally feel these kinds of roti’s are ideal for kids. especially to those fussy eaters, who avoid eating vegetables or fresh greens. this is loaded with fibre and helps to improve the constipation problem or any digestion problems. therefore, i would recommend you to give it a try and let me know your thoughts on this recipe.

furthermore, i would like to add some more additional tips, suggestions and variations to methi na dhebra. firstly, in this recipe, i have used the combination of bajra flour and wheat flour to make it interesting and flavourful. this can be prepared with just bajra flour or with a combination of plain flour too. secondly, rolling these roti’s with bajra flour can be tricky, especially for beginners. therefore, you may have rough edges while rolling it thin. hence i have used a round plate to cut the edges which should make it easy and attractive. lastly, i have particularly used ghee while frying these roti’s. i would recommend using ghee as it would make it tastier but cooking oil is just fine.

Ingredients
  

  • 1 cup curd
  • ½ tsp pepper, crushed
  • 2 chilli, finely chopped
  • 2 tbsp jaggery
  • ½ tsp cumin powder
  • ½ tsp chilli powder
  • 2 tbsp sesame
  • ¼ tsp ajwain
  • 1 tsp ginger paste
  • ½ tsp salt
  • 1 cup methi, finely chopped
  • 2 tbsp coriander, finely chopped
  • 2 cup bajra flour
  • ½ cup wheat flour
  • ghee, for roasting

Instructions
 

  • firstly, in a large bowl take 1 cup curd, ½ tsp pepper, 2 chilli and 2 tbsp jaggery.
  • also add ½ tsp cumin powder, ½ tsp chilli powder, 2 tbsp sesame, ¼ tsp ajwain, 1 tsp ginger paste and ½ tsp salt.
  • now add 1 cup methi and 2 tbsp coriander. make sure to finely chop methi, else it will not combine well with the dough.
  • mix well making sure everything is well combined.
  • further, add 2 cup bajra flour and ½ cup wheat flour.
  • start to knead the dough without putting much pressure.
  • add water as required and knead to a smooth and soft dough.
  • grease the dough with ghee. ghee helps to give a nice flavour to the roti.
  • cover and rest for 20 minutes.
  • after 20 minutes, knead the dough slightly and pinch a ball sized dough.
  • dust with wheat flour and roll uniformly.
  • further, roll to a slightly thick thickness like paratha.
  • now on a hot tawa, place the rolled roti and cook for a minute.
  • furthermore, when the base is partly cooked flip over.
  • also, spread ½ tsp oil / ghee and cook both sides.
  • finally, enjoy methi na dhebra with raita and pickle.

notes:

  • firstly, make sure to add curd, else the bitterness of methi will be intense.
  • also, cooking the roti with ghee helps to make roti flavourful.
  • additionally, bajra flour doesn’t have gluten in it, so it will be difficult to roll. adding wheat flour helps in binding.
  • finally, methi na dhebra recipe tastes great when flavours of bitterness, spiciness, sourness and sweetness are balanced.
