with step by step photo and video recipe. a traditional and spicy maharashtrian rice recipe which is typically prepared with combination of tendli or eggplant / brinjal vegetables. however it is even prepared with mixed vegetables like, potatoes, carrot, peas and even cauliflower. further it can be served without any accompaniment, yet it tastes great with simple raita or curd / yoghurt.

traditionally masale bhat recipe is always considered as a one pot meal recipe or complete meal without any side dish to it. however these days it is often served as a rice dish in a thali or in a proper full course meal with other curries and roti’s. but i personally prepare this rice recipe for my daily breakfast or for my husband’s lunch box. i typically prepare the spice mix or goda masala well ahead in advance and i use it whenever i like to prepare this flavourful masala bhaat recipe. trust me it is so time saving yet full of flavours and spice.

masala bhaatfurthermore some important and easy tips for a perfect and flavoured masala bhaat recipe. firstly, it tastes great with the combination of tendli and brinjal and i highly recommend to use it if you have access to it. i was running short of it and i used mixed vegetables. secondly, you can use pressure cooker to prepare the same recipe if you are running short of time. just add the spice mix or goda masala, vegetables and soaked sona masuri rice and pressure cook it for 3-4 whistles. lastly, i heavily recommend to use ghee for frying the vegetables and spices instead of cooking oil for authentic taste and flavour.

Ingredients 

for masala powder:

  • 1 tsp oil
  • 1 tbsp coriander seeds
  • ½ tsp cumin / jeera
  • ½ tsp sesame seeds / til (white / brown)
  • 1 star anise
  • ¼ tsp poppy seeds / khasakhas
  • 1 black cardamom
  • ½ inch cinnamon stick
  • 5 cloves
  • 1 tbsp dry coconut / copra
  • ¼ tsp black pepper

for masale bhaat:

  • 1 tbsp ghee / clarified butter
  • 1 tsp mustard / rai
  • ½ tsp cumin / jeera
  • 1 bay leaf / tej patta
  • pinch of hing / asafoetida
  • ½ onion (finely chopped)
  • 2 green chilli (slit)
  • 1 tsp ginger-garlic paste
  • 1 to mato (finely chopped)
  • 15 whole cashew / kaju
  • 1 cup mixed vegetables (peas, gobi, carrot)
  • 1 potato (cubed)
  • ½ tsp turmeric / haldi
  • ½ tsp chilli powder
  • 1 cup short grain rice (basmati rice tukda / sona masuri rice, soaked 20 minutes)
  • cups water (adjust accordingly)
  • 1 tsp salt (or to taste)
  • 2 tbsp fresh coconut (grated)
  • 2 tbsp coriander leaves (finely chopped)


Instructions 

  • firstly, heat ghee and prepare tempering.
  • add onion, chilli and ginger-garlic paste. saute well.
  • furthermore add 1 tomato, cashew and mixed vegetables. saute well.
  • additionally, add spice powder.
  • saute the spices on low flame for a minute.
  • further add rice, water and salt.
  • stir well, cover and simmer for 20 minutes.
  • add in 2 tbsp fresh coconut and coriander leaves.
  • finally, serve masale baath with raita or tomato saaru.

how to make maharashtrian masala bhaat with step by step photo:

  1. firstly, dry roast all the spices with a tsp of oil. you can alternatively use goda masala instead of freshly preparing spice mix.

  2. also add dry coconut and continue to roast for a minute.

  3. now blend to coarse powder and keep the prepared masala aside.

  4. in a large kadai heat 1 tbsp ghee and saute 1 tsp mustard, ½ tsp cumin, 1 bay leaf and pinch of hing.

  5. also add ½ onion and saute well.

  6. additionally add 2 green chilli and 1 tsp ginger-garlic paste. saute well.

  7. furthermore add 1 tomato and saute till they turn soft and mushy.

  8. now add 15 whole cashew and 1 cup mixed vegetables along with potato. saute well.

  9. additionally, add ½ tsp turmeric, ½ tsp chilli powder and 2-3 tsp of prepared masala. or alternatively use goda masala.

  10. saute the spices on low flame for a minute.

  11. further add 1 cup short grain rice, soaked for 20 minutes.

  12. saute for a minute. this prevents rice grains from sticking to each other.

  13. add in 2½ cups water and 1 tsp salt.

  14. stir well, cover and simmer for 20 minutes.

  15. simmer till the rice gets cooked well completely and water is absorbed.

  16. add in 2 tbsp fresh coconut and coriander leaves.

  17. finally, serve masale baath with raita or tomato saaru.

notes:

  • firstly, add vegetables of your choice like tindora or brinjal.
  • also instead of freshly preparing masala, you can use store brought goda masala.
  • additionally, pressure cook for 2 whistles if you do not want to simmer for 20 minutes.
  • finally, masale baath taste great when served with a dollop of ghee.
