i am not a huge fan of sharbat recipes and i feel these are just sugar-loaded chilled water. but my perspective of milk-related drinks or even milk sharbat is totally opposite. as compared to the water-based sharbat, milk-based is more creamy, healthy, filling, and more importantly very refreshing. this makes it a complete package, especially when you need something quick and effective thirst quencher from the scorching summer heat. i generally prepare it and store it in the fridge and serve it whenever it is required. it can easily last long for weeks if you store it in the refrigerator, but hardly takes a couple of minutes to prepare it. so preparing it fresh and serving it can be an ideal option.

furthermore, some more additional tips, suggestions and variants to the milk sharbat recipe. firstly, i have used full cream milk for this recipe, which makes it more rich, creamy and filling. having said that if you need something lite and less creamy, you may very well use the lite or skim milk for the same purpose. secondly, once you cook the milk with custard powder, it may thicken like the custard sauce recipe. you may either serve it as it is or add water or even add ice cubes that should lower the consistency. lastly, this sharbat can be just prepared with dry fruits and their paste. you may totally skip the custard powder addition if you do not prefer to.

Ingredients
  

for dry fruit paste:

  • 2 tbsp almonds
  • 2 tbsp pistachios
  • 2 tbsp cashew
  • hot water, for soaking
  • 2 tbsp milk

for sharbat:

  • litre milk
  • few saffron
  • 2 tsp custard powder
  • ½ cup milk
  • ½ cup sugar
  • pistachios, for garnishing

Instructions
 

  • firstly, in a bowl take 2 tbsp almonds, 2 tbsp pistachios, 2 tbsp cashew.
  • soak in hot water for 10 minutes.
  • peel the skin off the almonds and transfer to a mixer jar.
  • add 2 tbsp milk and grind to a smooth paste. keep aside.
  • in a large kadai take 1½ litre of milk and few saffron.
  • stir and get the milk to a boil.
  • now add the prepared nuts paste and mix well.
  • continue to boil until the milk thickens slightly.
  • further, in a small bowl take 2 tsp custard powder and ½ cup milk.
  • stir and mix until the custard powder is well combined.
  • pour the custard milk into the milk mixture.
  • continue to cook until the milk thickens slightly.
  • further, add ½ cup sugar and mix well until the sugar is combined well.
  • adjust the consistency as required, once cooled the milk is going to thicken slightly.
  • cool completely. transfer to a large bowl, and refrigerate for 4 hours.
  • after 4 hours, give a whisk to the mixture making sure everything is well combined.
  • now add ice cubes and is ready to serve.
  • finally, pour the milk sharbat into a tall glass, top with nuts and saffron.
