MAIDA - 3 CUP

firstly, in a large bowl take 3 cup maida, 1 tsp baking powder, ¼ tsp baking soda and ½ tsp salt. mix well

CURD - HALF CUP

now add ½ cup curd and combined well

WATER AS REQUIRED

adding water as required to knead the dough

SOFT DOUGH

knead for 5 minutes forming a soft dough

OIL - 2 TBSP

now add 2 tbsp oil and continue to knead

REST - 2 HOURS

knead to a smooth and soft dough. tuck the dough making sure all the sides are smooth

REST - 2 HOURS

cover and rest for 2 hours

ONION - 1 CHOPPED

meanwhile prepare the onion toppings, in a small bowl take 1 onion

CHILLI POWDER 

add 2 tbsp coriander, ½ tsp cumin powder, ½ tsp chilli powder, ½ tsp garam masala, ½ tsp salt and ½ tsp chaat masala.

ONION TOPPINGS READY

mix well making sure all the spices are well combined. keep aside.

SOFT DOUGH

after the dough has rested for 2 hours, knead the dough slightly.

BALL SIZED DOUGH

pinch a large ball sized dough and roll

SLIGHTLY THICK

dust the maida and roll to an oval shape with a slightly thick thickness

OINION TOPPINGS 

spread onion topping and press gently

ROLL GENTLY

place a butter paper, and roll making sure the onions stick to the dough.

SPREAD WATER

flip over and now spread a tbsp of water. this helps to stick the kulcha on tawa.

HOT TAWA

now transfer the rolled kulcha on hot tawa (waterside facing the tawa). press gently, helping the kulcha to stick to the tawa

MEDIUM FLAME

cook for a minute, or until a couple of bubbles appear and the base is cooked wel

COOKED WELL

now flip over and keep over the flame. this gives the tandoor effect helping the kulcha to cook like in tandoor.
