furthermore, this recipe is a adapted version of sanjeev kapoor sir’s vegetable biriyani recipe in pressure cooker. however, i have introduced several variations to this recipe. also, to keep it simple, i have used a store brought biriyani masala. and skipped all the vegetables with just paneer. in marination process, i have used only paneer with some diced bell pepper and onions. if you wish you can also add other vegetables to this recipe. meanwhile, have a look at my hyderabadi vegetable biryani recipe.

biryani recipe has always been my favourite rice recipes. out of all the biryani recipes, i love paneer biryani the most. the main reason being, obviously because of the soft and juicy paneer cubes hidden within the biryani rice. whenever, we go out for lunch or dinner we do not forget to order this recipe. i also some time prepare palak paneer biryani recipe with the left over palak gravy. i will soon post that recipe too. if you are looking more paneer recipes then try out malai kofta, paneer sandwich, kadai panner, homemade paneer.

Ingredients
for paneer marination:
  • 1 cup curd
  • ½ tsp turmeric powder
  • ¾ tsp ginger-garlic paste
  • 2 tsp biryani masala
  • salt to taste
  • 1 tsp chilli powder
  • 15-20 paneer pieces, homemade paneer
  • ½ capsicum, cubed
  • ½ onion, cubed
  • fistful mint leaves / pudina
for frying onions:
  • 2-3 tbsp oil / ghee
  • 1 large onion, sliced
spices:
  • 1 bay leaf / tej patta
  • 1 cinnamon stick
  • 10-15 black pepper
  • 3 cardamom
  • 4 cloves
  • 1 star anise
for layering paneer biryani:
  • 1 cup basmati rice, soaked 30 minutes
  • 1 cup water
  • fistful coriander, chopped
  • few mint leaves / pudina
  • pinch of biryani masala
  • 3 tbsp saffron milk
  • salt to taste
Instructions ( 1 cup =255 ml)
paneer marination recipe:
  1. in a large mixing bowl, take one cup of thick curd.
  2. add turmeric powder, ginger garlic paste, biryani masala, salt to taste and chilli powder.
  3. mix the spices with curd with the help of whisk.
  4. in addition, add cubed panner to the spiced curd.
  5. furthermore, add in cubed capsicum, onions and mint leaves.
  6. mix gently. do not break paneer.
  7. keep aside 1 hour to marinate.
frying onions recipe:
  1. heat pressure cooker and add 3 tbsp of oil / ghee. along with it add sliced onions.
  2. fry the onions till they turn golden brown.
  3. once the onions turn golden brown drain on absorbent paper. so that excess oils are absorbed.
layering paneer biryani recipe:
  1. finally,now add spices like bay leaf, cinnamon stick, black pepper, cardamom, cloves and star anise. fry till they turn fragrant.
  2. add the prepared marinated panner to the cooker and even them out.
  3. now add basmati rice (soaked for 30 minutes) and spread evenly over marinated paneer.
  4. with a wide spoon, create some gaps between rice and marinated paneer.
  5. furthermore, add 1 cup of water. level out rice and make sure rice grains are immersed into water.
  6. spread chopped coriander leaves and mint over it.
  7. also spread some fried onions over it.
  8. add a pinch of biryani masala over it.
  9. now add saffron milk pouring uniformly. (soak pinch of saffron stands in 3 tbsp of warm milk)
  10. sprinkle some salt to taste.
  11. cover the cooker along with whistle / vent. cook for 20 minutes on low flame.
  12. finally, once the pressure settles down, then open the lid and serve the paneer biryani along with bhindi ka salan.

notes:

  • firstly, along with paneer, you can also add veggies of your choice.
  • also, keep the flame low for 20 minutes. this ensures the rice to cook perfectly.
  • in addition, add some fried onions after sauting spices. i have added all the fried onions over rice.
  • finally, use basmati rice to get rich flavour. and always maintain the ratio of 1 cup rice to 1 cup curd and 1 cup water.

  10. Hi, can I make this in rice cooker? I have electric stove. Am not sure if I can simmer it down for 20 mins without whistle.
