mango cake recipe | eggless mango cake | mango sponge cake with detailed photo and video recipe. a popular and tasty seasonal sponge cake recipe made with cake batter and mango pulp. the recipe is very similar to the sponge cake or vanilla cake but has an additional strong flavour of mango pulp in it. it can be served either as a dessert recipe with a choice of frosting or as an evening snack with a choice of coffee or tea beverage.
i have posted quite a few cake recipes till now, but i was waiting on this particular mango cake to post on my blog. being a seasonal fruit, you need to be quick to plan and bake it. every season i get distracted or i plan some other mango recipes and mango sponge cake get sidelined. this season my husband was very particular and has requested me to plan for a mango cake and post it in the right time. as matter of fact, i had prepared this video long back the summer season is here in australia is during december and january. but i had delayed it posting on my blog so that it matches indian summer season. in this post, i have used australian grown honey gold, but you can use any choice of sweet mangoes for this recipe.
anyway, before wrapping up the recipe post, i would like to highlight some tips, suggestions and variations to mango cake recipe. firstly, in this recipe post, i have not shown frosting on top of the cake. i have tried to make it basic dessert snack. however, you can add your choice of frosting on top of it. refer my black forest cake recipe for frosting details. secondly, apart from mango flavour you can also add additional flavour to this cake. for instance, you can add pineapple, grape or even orange flavours. lastly, in this recipe, i have added oil as part of wet ingredient. but you can add butter as an alternate to have better flavour. however, the cake may turn hard as it is rested as butter turn solid.

Ingredients
- 1 cup mango, cubes
- ¾ cup 180 grams sugar
- ½ cup (120 ml) oil
- 1 tsp vinegar
- ½ tsp yellow food colour
- 2 cup (280 grams) maida / plain flour
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ¼ cup (60 ml) milk
for baking in cooker:
- salt or sand
Instructions
- firstly, in a blender take 1 cup mango and ¾ cup sugar.
- blend to smooth puree dissolving sugar completely.
- transfer the mango puree into large bowl.
- add ½ cup oil, 1 tsp vinegar and ½ tsp yellow food colour.
- using a whisk, mix well making sure everything is well combined.
- now place a sieve and add 2 cup maida, 1 tsp baking powder, ¼ tsp baking soda and ¼ tsp salt.
- sieve the flour making sure there are no lumps.
- mix well using cut and fold method.
- now add ¼ cup milk and mix until the batter is combined well.
- to prepare cake in a pressure cooker add in 1½ cup of salt and close the lid of cooker without keeping the gasket and whistle. heat for 5 to 10 minutes. as a result, gives a preheat oven atmosphere.
- now transfer the cake batter to a cake mould (dia: 7 inch, height: 4 inch). make sure to line a butter paper at the bottom to prevent from sticking.
- and also tap twice to level up uniformly and remove any air bubbles if present.
- place the cake pan into preheated cooker.
- cover and cook on a medium flame for 45 minutes. you can alternatively, preheat and bake at 180-degree celsius for 45 minutes.
- insert a toothpick and check if the cake has baked completely.
- cool the cake and then unmould the aam cake.
- finally, enjoy eggless mango cake as it is or decorate with frosting.

notes:
- firstly, adjust the amount of sugar depending on the sweetness of mango.
- also, adding yellow food colour is optional. however, it gives a bright colour to the cake.
- additionally, replace maida with wheat flour to make the cake more healthy.
