as i previously mentioned, this recipe of baby corn chilli recipe is very much inspired from the chilli paneer or chilli chicken recipe. basically a starter recipe for vegetarians or baby corn lovers. the recipe is very simple as compared to is successors and can be made directly from the deep fried baby corn fritters. the same baby corn fritters can be used to make manchurian recipe as well as there isn’t any huge difference with the fritters. personally, i like the baby corn chilli recipe compared to the baby corn manchurian as it has the combination of sweet and spice to offer. baby corn typically has some sweetness in it and when combined with chilli it makes a perfect tasty combination.
furthermore, i would like to add some easy tips and variations for a perfect baby corn chilli recipe. firstly, i would heavily recommend using a tender and fresh baby corn for this recipe. it has to hold its shape and should not be soft and stale. secondly, you can prepare these deep-fried fritters well ahead in advance and use it when required. i generally prepare these and store it in a preheated oven to hold its crispiness and shape. lastly, you can add variation or extend it by adding extra sauces to make it a lip-smacking smack. perhaps schezwan sauce and tomato ketchup sauce is an ideal contender for these.

Ingredients
for frying baby corn:
- 3 cup water
- 9 baby corn, chopped
- ½ cup maida / plain flour
- ¼ cup corn flour
- ½ tsp kashmiri red chilli powder
- ¼ tsp pepper, crushed
- ½ tsp ginger paste
- ½ tsp salt
- ½ cup water
- oil for frying
for corn flour slurry:
- 1 tsp corn flour
- ¼ cup water
other ingredients:
- 3 tsp oil
- 2 green chilli, slit
- 1 inch ginger, finely chopped
- 3 clove, finely chopped
- 4 tbsp spring onion, finely chopped
- ½ onion, petals
- ½ capsicum, cubed
- 2 tbsp tomato sauce
- 1 tbsp vinegar
- 1 tbsp soy sauce
- ¼ tsp pepper, crushed
- ¼ tsp sugar
- ¼ tsp salt
Instructions
- firstly, in a large kadai heat 3 tsp oil and saute 2 green chilli, 1 inch ginger and 3 clove on high flame.
- also saute 2 tbsp spring onion slightly.
- now add ½ onion, ½ capsicum and saute on high flame.
- additionally add 2 tbsp tomato sauce, 1 tbsp vinegar, 1 tbsp soy sauce, ¼ tsp pepper, ¼ tsp sugar and ¼ tsp salt.
- mix well and saute for a minute.
- add cornflour slurry. to prepare corn flour water mix 1 tsp of corn flour with ¼ cup of water.
- give a good mix until the gravy slightly thickens and turns translucent.
- additionally, add fried baby corn.
- mix gently making sure the sauce has coated well uniformly
- finally, transfer chilli baby corn to a serving bowl and garnish with chopped spring onions green. serve with fried rice.
how to make chilli baby corn with step by step photo:
frying baby corn:
- firstly, in a large vessel boil 3 cup water.
- add in 9 chopped baby corn and simmer for 5 minutes.
- drain off the baby corn and keep aside.
- further, in a large mixing bowl take ½ cup maida and ¼ cup corn flour.
- also add ½ tsp chilli powder, ¼ tsp pepper, ½ tsp ginger paste and ½ tsp salt.
- add in ½ cup water and prepare a smooth lump free batter.
- furthermore, add in blanched baby corn and coat well.
- deep fry in hot oil or preheat and bake at 180 degree celcius for 30 minutes.
- stir occasionally and fry until the baby corn turns golden and crisp.
- finally, drain off the fried baby corn over a kitchen towel to remove excess oil. keep aside.

notes:
- firstly, cut the baby corn to a size of your choice or prepare with whole baby corn itself.
- additionally, do not over boil baby corn as it is deep fried once coated with batter.
- also, add red food colour to the batter to prepare bright red colour chilli baby corn.
- furthermore, adjust the consistency of gravy by increasing the cornflour water.
- finally, chilli baby corn recipe tastes great when served hot and crispy.
