well, i have posted both the south indian and north indian variants of dhai bhalla but i do get a lot of requests about something simple chaat recipe. urad dal based vada can be tricky especially if it is ground in a mixer grinder. the air bubbles may get stuck in the batter and may burst out when deep-fried. personally, i have faced this issue and hence i would always take precautions while deep frying. therefore, i would always recommend some easy alternative and bread-based dahi bhalla is one such easy option. there is no fermentation, soaking and mainly grounding whereas in this recipe the breadcrumbs are mixed with boiled potatoes to form mini vadas. these are soft and crisp and easily absorbs the juice when soaked with yoghurt and other chaat chutneys.

Ingredients
for bread vada:
- 5 slice bread
- 3 potato, boiled & mashed
- ½ onion, finely chopped
- 1 carrot, grated
- 2 chilli, finely chopped
- ½ tsp ginger paste
- 1 tsp cumin
- 2 tbsp coriander, finely chopped
- ½ tsp salt
- oil, for frying
for sweetened curd:
- 2 cup curd, thick
- 2 tbsp sugar
- ¼ tsp salt
for chaat:
- green chutney
- tamarind chutney
- boondi
- chilli powder
- cumin powder
- chaat masala
- coriander leaves, finely chopped
Instructions
how to make bread vada:
- firstly, cut 5 slice of bread and transfer to the mix.
- pulse and grind until the breadcrumbs are formed.
- transfer the bread crumbs into large bowl.
- add 3 potato, ½ onion, 1 carrot, 2 chilli, ½ tsp ginger paste, 1 tsp cumin, 2 tbsp coriander and ½ tsp salt.
- squeeze and mix well making sure everything is well combined.
- form a soft dough.
- now pinch a ball sized mixture and shape to round shape.
- deep fry in hot oil, keeping the flame on medium.
- stir occasionally, until the vada turns golden brown and crisp.
- drain off making sure to remove excess oil. keep aside.

- firstly, in a bowl take 2 cup curd, 2 tbsp sugar and ¼ tsp salt.
- mix well forming a smooth and silky consistency curd. keep aside.

- then pour green chutney and tamarind.
