cabbage dosa recipe | sanna polo recipe | cabbage sanna polo konkani recipe with detailed photo and video recipe. an authentic and traditional dosa recipe made with finely chopped cabbage in a rice and spice mix batter. it is a favourite and a popular choice for many south indians, particularly in the south canara region for its combination flavours in each bite. it is generally, served with a hint of butter toppings, but also tastes great with a choice of spicy pickle or even any chutney.
well to begin with this recipe is very similar to my previous ridge gourd or heerekayi dose recipe. the batter is exactly the same with the same combination of rice, urad dal, red chillies, jaggery and salt. but there is a big difference with the vegetable is used in both the recipes. in the ridge gourd, i have not mixed it to the dosa batter, but sliced it thin and dipped it into the batter before roasting it. in other words, it is very similar to joining pakora and frying them together to form a dosa. whereas this recipe is much simpler and i have finely chopped the cabbage and mixed it into the batter directly. later the same batter is spread over a dosa pan similar to any dosa recipe.
furthermore, i would also like to add some more tips, suggestions and variations to the cabbage dosa recipe. firstly, i would heavily recommend using fresh and tender cabbage which easily gets finely chopped. ripe one would not release its juice and also do not mix well with the batter and you may not be able to spread it. secondly, this recipe is generally not served with any side dish like chutney, sambar or pickle and hence the spice mix added has to be the proper amount. in other words, the combination of jaggery, red chillies, salt and tamarind has to be balanced so that dosa can be served by itself. lastly, avoid using cast iron tawa for this dosa as it may stick to the bottom.

Ingredients
for soaking:
- 1 cup rice
- 2 tbsp urad dal
- ½ tsp methi
- water, for soaking
- 10 dried red chilli
for masala paste:
- 1 cup coconut, grated
- 2 tbsp coriander seeds
- 1 tbsp cumin
- ¼ cup jaggery
- 3 tbsp tamarind pulp
- ½ tsp turmeric
- 1 tsp salt
other ingredients:
- 3 cup cabbage, finely chopped
- 1 cup water
Instructions
- firstly, in a large bowl take 1 cup rice, 2 tbsp urad dal and ½ tsp methi.
- rinse with water making sure they are clean.
- now add 10 dried red chilli and soak in water for 5 hours.
- after 5 hours, the chilli would have soaked well.
- to prepare masala paste, now take the soaked chilli into mixi jar.
- add 1 cup coconut, 2 tbsp coriander seeds, 1 tbsp cumin, ¼ cup jaggery, 3 tbsp tamarind pulp, ½ tsp turmeric and 1 tsp salt.
- grind to smooth paste adding water as required.
- transfer the masala paste into a large bowl and keep aside.
- in the same mixi take soaked rice.
- blend to smooth paste.
- now transfer the rice batter to the same bowl of the masala paste.
- mix well making sure everything is well combined. note, always grind rice and masala separately, else masala paste will not be smooth.
- further, add 3 cup of cabbage and 1 cup water.
- mix well forming a smooth flowing consistency dosa batter.
- grease the pan and pour a ladleful of batter. spread gently keeping slightly thick.
- now pour ½ tsp coconut oil.
- cover and cook for a minute, until the dosa is cooked well.
- flip over and cook on another side. recommend cooking both sides as the dosa is slightly thick and cabbage is raw.
- finally, enjoy cabbage dosa with butter or coconut oil.

notes:
- firstly, make sure to finely chop the cabbage, else it will be hard and takes long time to cool.
- also, along with cabbage, you can also add onion and green leafy vegetables like methi or palak.
- additionally, the balance of spiciness, tanginess and sweetness will make this dosa perfect.
- finally, cabbage dosa recipe tastes great when served with fresh butter.
