steam cake recipe | steamed chocolate cake | eggless steamed sponge cake with detailed photo and video recipe. a unique way of preparing the traditional eggless sponge cake recipe, using a steamer. it is also known as a chinese way of preparing the cake which mainly deals with a cake prepared from rice and egg. but in the recipe post, a conventional sponge cake is prepared with rice cooker or steamer for those who do not have access to a baking oven.
i have shared quite a few cake recipes including sponge cake, cheesecake and chocolate, but i receive a lot of request for cake recipes without an oven. for the same, i have already shared cooker cake recipe preparing sponge chocolate cake recipe. but with cooker, there is a risk of damaging it while preparing because of no water used to bake the cake. hence i am sharing the steam cake recipe prepared mainly with steam and water. basically, the technique is very ancient with the chinese cuisine and it is typically used to prepare rice buns. i have adopted the same technique using the steamer (or even the idli stand) to prepare the sponge chocolate cake.
furthermore, some tips and recommendations to prepare the moist and sponge steam cake recipe. firstly, in this recipe, i have shared the sponge chocolate cake recipe with cocoa powder added while steaming it. having said that, any flavoured cake can be prepared with the same steaming method as per your taste and preference. secondly, it almost took 70 minutes for me to steam and bake the cake. but it may differ with your steamer and i would highly recommend to check and verify the cake after 40-50 minutes at an interval of 5 minutes. lastly, you can decorate and frost as per your preference. while i have used plain chocolate frosting, you can white cream or cream cheese frosting as mentioned in my black forest and oreo cheese cake.

Ingredients
for chocolate cake:
- ¾ cup (170grams) curd / yogurt
- ¾ cup (150 grams) sugar
- 1 tsp vanilla extract
- ½ cup 100 grams oil
- 1¼ cup (190 grams) maida / plain flour
- ¼ cup (20 grams) cocoa powder
- 1 tsp baking powder
- ¼ tsp baking soda
- pinch of salt
- ¼ cup milk
for frosting:
- 2 tbsp (60 grams) butter, room temperature
- 1 cup (135 grams) powdered sugar / icing sugar
- ¼ cup (20 grams) cocoa powder
- ¼ cup heavy cream, chilled
- 1 tsp vanilla extract
Instructions
- transfer the cake batter into the round cake mould (dia: 7 inch, height: 4 inch).
- level up the batter and pat the pan twice to remove the air incorporated into the batter.
- cover with aluminium foil or place a pate to prevent water from entering while steaming cake.
- place the cake pan into a steamer with enough water for 70 minutes.
- spread the generous amount of prepared chocolate frosting over cake.
- finally, eggless steamed chocolate cake recipe is ready.
how to make steamed chocolate cake with step by step photo:
- firstly, in a large mixing bowl take ¾ cup curd, ¾ cup sugar and 1 tsp vanilla extract.
- whisk well till the sugar dissolves completely.
- further, add ½ cup oil and whisk till the oil combines well.
- further sieve 1¼ cup maida, ¼ cup cocoa powder, 1 tsp baking powder, ¼ tsp baking soda and a pinch of salt.
- mix well using cut and fold method. do not over mix as the cake turns rubbery and chewy.
- further, add ¼ to ½ cup milk if required and mix well forming thick flowing consistency batter.
- further, transfer the cake batter into the round cake mould (dia: 7 inch, height: 4 inch). make sure to grease the mould with butter to avoid sticking and line butter paper at bottom of the tray.
- level up the batter and pat the pan twice to remove the air incorporated into the batter.
- cover with aluminium foil or place a pate to prevent water from entering while steaming cake.
- place the cake pan into a steamer with enough water. alternatively, place in the preheated oven. bake the cake at 180-degree celsius or 356 degrees fahrenheit for 40 minutes.
- steam for 70 minutes. make sure to add water to the steamer if water finishes off in between.
- remove the aluminium foil and check if the toothpick inserted comes out clean. cool the cake completely.
chocolate frosting recipe:
- now prepare the frosting, by taking 2 tbsp butter in a large bowl.
- beat the butter till it turns smooth and fluffy.
- add in 1 cup powdered sugar, ¼ cup cocoa powder, ¼ cup heavy cream and 1 tsp vanilla extract.
- mix well and then beat till the frosting turns smooth and fluffy.
- also, continue to beat until thick and firm peaks appear to the frosting. add more icing sugar if frosting is watery.
- spread the generous amount of prepared chocolate frosting over cake.
- finally, eggless steamed chocolate cake recipe is ready, cut the cake into the desired shape and serve. store in the refrigerator to serve later.
notes:
- firstly, steam the cake on medium flame without opening the steamer in between.
- also, add enough water to the steamer to prevent steamer from drying out.
- additionally, the same steam cake can be prepared without adding cocoa powder.
- furthermore, replace maida with wheat flour if you are looking for a healthy cake recipe.
- finally, make sure to cover with aluminium foil to prevent the steam cake from turning soggy while steaming.
