since the beginning of this pandemic and its subsequent lockdowns, i have been getting a lot of requests for momos recipes. perhaps the street food craving could be the main reason for this. especially in northern india, there is a huge fan following for the momos recipes. hence to meet those requirements, i am posting a unique momo meal by combining the traditional momos with indo chinese manchurian sauce. in other words, it is basically gobi manchurian recipe with gobi florets replaced with steamed momos. perhaps, you may feel the end to end recipe steps can be lengthy by preparing the momos and sauce. but this recipe is a perfect meal when you have some leftover momos and wish to make something innovative from it. hence i would strongly recommend trying this recipe as an alternative to the other manchurian recipes.

momo manchurian recipefurthermore, some more additional tips, suggestions and variations to the manchurian momos recipe. firstly, you may use any type of momos for this recipe including paneer, soya chunks or even meat variant. in addition, you may change the sauce to make chilli or even schezwan variant too. refer to my indo chinese category for the corresponding sauces. secondly, you may either make it a gravy version or perhaps with the dry variant. with a gravy option, you may serve it as a soup meal. lastly, try to make the small momos for this recipe as it may collapse when you stir fry it with manchurian sauce.

Ingredients 

for momos dough:

  • cup maida
  • ½ tsp salt
  • water (for kneading)
  • oil (for greasing)

for vegetable stuffing:

  • 3 tsp oil
  • 2 clove garlic (finely chopped)
  • 1 chilli (finely chopped)
  • 2 tbsp spring onion (chopped)
  • ½ onion (finely chopped)
  • 2 cup cabbage (finely chopped)
  • 1 carrot (finely chopped)
  • 1 tsp soy sauce
  • ¼ tsp pepper powder
  • ½ tsp salt
  • 2 tbsp spring onion (chopped)

for manchurian sauce:

  • 2 tbsp oil
  • 2 clove garlic
  • 1 inch ginger
  • 2 tbsp spring onion
  • 2 tbsp onion (finely chopped)
  • 2 tbsp carrot (finely chopped)
  • 3 tbsp cabbage (finely chopped)
  • 3 tbsp capsicum (finely chopped)
  • 2 tbsp vinegar
  • 2 tbsp soy sauce
  • 2 tsp chilli sauce
  • ¼ tsp pepper powder
  • ¼ tsp salt
  • 1 cup corn flour slurry
  • ½ tsp chilli powder
  • ¼ cup water
  • 2 tbsp spring onion (chopped)

Instructions
 

how to make vegetable stuffing for veg momos:

  • firstly, in a kadai heat 3 tsp oil.
  • add 2 clove garlic, 1 chilli and 2 tbsp spring onion. stir fry on high flame.
  • now add ½ onion, saute until the onions shrink slightly.
  • further add 2 cup cabbage, 1 carrot and stir fry.
  • additionally, add 1 tsp soy sauce, ¼ tsp pepper powder and ½ tsp salt.
  • mix well making sure everything is well combined.
  • finally, add 2 tbsp spring onion and mix well. vegetable stuffing for momos is ready.

how to make veg momos:

  • firstly, in a large bowl take 1½ cup maida and ½ tsp salt. mix well.
  • now add water as required and start to knead the dough.
  • knead for 5 minutes, or until the dough turns non-sticky and soft.
  • grease the dough with oil, cover and rest for 20 minutes.
  • after 20 minutes, knead the dough slightly.
  • pinch a small ball sized dough and roll uniformly.
  • roll to slightly thin thickness.
  • now place a tbsp of prepared vegetable stuffing.
  • start to pleat from one side without damaging.
  • bring all together and twist to seal tight.
  • place the momos into the steamer. make sure to grease the plate to prevent momos from sticking.
  • steam for 10 minutes, or until a shiny layer appears.
  • finally, veg momos are ready. keep aside.

how to make manchurian sauce:

  • firstly, in a large wok heat 2 tbsp oil. add 2 clove garlic, 1 inch ginger, 2 tbsp spring onion and 2 tbsp onion.
  • stir fry until the onions shrink slightly.
  • further add 2 tbsp carrot, 3 tbsp cabbage and 3 tbsp capsicum.
  • stir fry making sure all the vegetables are cooked yet crunchy.
  • keeping the flame on high, add 2 tbsp vinegar, 2 tbsp soy sauce, 2 tsp chilli sauce, ¼ tsp pepper powder and ¼ tsp salt.
  • stir fry until the sauces are well combined.
  • now add 1 cup corn flour slurry and mix well. to prepare the slurry, i have mixed 2 tsp cornflour in 1 cup water.
  • keep cooking until the slurry thickens and turns glossy.
  • for that extra spice, add ½ tsp chilli powder and ¼ cup water.
  • mix well forming a smooth saucy texture.
  • now add steamed momos add 2 tbsp spring onion.
  • mix gently, making sure all the sauce is well coated to momos.
  • finally, enjoy vegetable momos manchurian topped with more spring onions.
