my daily diet includes roti’s or chapathi for our dinner and i end up preparing paneer recipes frequently. i do not have restriction to my diet as far as it is vegetarian and i use onions and garlic generously in my curries or sabzi recipes. however i was getting several requests for vrat specials recipe, especially without onion and garlic. hence i tried this paneer butter masala without onion and garlic and i really liked it and i wanted to share it during this festival season of navaratri. this recipe can also be termed as jain paneer recipes as it should suffice the requirements of typical jain recipes when ginger is skipped.
furthermore some important and critical tips and recommendations for a perfect paneer butter masala recipe without onion and garlic. firstly, and more importantly the same recipe can be prepared with onions too. you can saute the onions with butter before adding the tomato puree. secondly, i have not blanched the tomatoes and prepared the tomato puree directly. alternatively, you can use store bought tomato puree too. finally, i have added homemade paneer without frying it separately. i would recommend to fry the paneer if you are using store bought paneer.

paneer butter masala without onion and garlic | paneer jain recipes
Ingredients
- 3 to mato, roughly chopped
- 2 tbsp butter
- 3 pods cardamom / elachi
- 1 inch cinnamon
- 1 bay leaf / tej patta
- ½ tsp jeera / cumin
- 1 inch ginger, finely chopped
- 1 green chilli, slit
- ¼ tsp turmeric
- ½ tsp kashmiri red chilli powder / lal mirch powder
- 1 cup milk
- ½ tsp coriander powder
- ¼ tsp sugar
- salt to taste
- ¼ cup cashew paste, prepared by blending 10 cashews
- 9 cubes panner / cottage cheese
- ¼ tsp garam masala
- ½ tsp kasuri methi / dry fenugreek leaves, crushed
Instructions
- firstly heat kadai with 2 tbsp butter.
- saute in ½ ts jeera, 3 pods cardamom, 1 inch cinnamon and 1 bay leaf till they turn aromatic.
- additionally add 1 inch ginger and 1 green chilli. saute well.
- further add tomato puree and cook till oil releases from sides.
- further add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp coriander powder, ¼ tsp sugar and ½ tsp salt.
- saute on low flame for a minute or till spices get cooked well.
- keeping the flame on low add ¼ cup cashew paste and 1 cup of milk stirring continuously.
- additionally add 9 cubes panner.
- cover and simmer for 5 minutes or till panner gets cooked well completely.
- further add ¼ tsp garam masala and ½ tsp crushed kasuri methi. mix well.
- finally, serve paneer butter masala with tandoori roti or aloo kulcha.
how to make no onion no garlic paneer butter masala with step by step photos:
- firstly, blend 3 tomatoes to smooth puree without adding any water. keep aside.
- now heat kadai with 2 tbsp butter.
- saute in ½ ts jeera, 3 pods cardamom, 1 inch cinnamon and 1 bay leaf till they turn aromatic.
- additionally add 1 inch ginger and 1 green chilli. saute well.
- further add prepared tomato puree and mix well.
- cover and cook for 5 minutes.
- now stir continuously and be careful as it splutters.
- stir till the mixture thickens and oil releases from sides.
- further add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp coriander powder, ¼ tsp sugar and ½ tsp salt.
- saute on low flame for a minute or till spices get cooked well.
- keeping the flame on low add ¼ cup cashew paste (prepared by soaking 10 cashews in warm water and blending to smooth paste)
- also add ½ to 1 cup of milk stirring continuously.
- adjust the consistency adding milk as required.
- additionally add 9 cubes panner. you can also roast paneer with a tsp of ghee before adding.
- cover and simmer for 5 minutes or till panner gets cooked well completely.
- further add ¼ tsp garam masala and ½ tsp crushed kasuri methi. mix well.
- finally, serve paneer butter masala with tandoori roti or aloo kulcha.
notes:
- firstly, use ripped tomatoes else the gravy turns to be more tangy and you end up adding more sugar to neutralise the tanginess.
- also, roast the paneer in ghee for more flavour.
- additionally, if you are looking to add onions then saute onions along with ginger.
- finally, paneer butter masala taste great when topped with more fresh cream.

ma’am for how long we hav to soak cashew in water n which milk needs to be used raw or boiled.. we can use water or not to adjust the consistency
boiled milk..soak for about 30mins..yes u can use water..
Mam whenever I add milk in gravy it gets teared out with water seperately
make sure to keep flame on low and keep stirring making sure milk does not curdle…
