It is basically served as a breakfast porridge which basically provides all the required nutrients and minerals in a morning meal. Porridge recipes are basically traditional healthy and economical meals prepared with different types of grains. It is basically prepared with the purpose of a healthy lifestyle but generally with either rice or wheat grains. But it can also be prepared with millet like ragi too and ragi java or ragi malt java is one such healthy and tasty porridge recipe.

I am a big fan of traditional recipes, which are typically simple, healthy, and to the point. Moreover, these traditional recipes were aimed at getting the best of the basic available ingredients during those times. One such traditional recipes are porridge recipes. It is basically a semi-solid food prepared by boiling the grains in water or milk. The most common porridge especially in Western countries is oatmeal and served for morning breakfast. Similarly, other ingredients like rice or ragi millet are used to prepare the individual porridge. While the rice porridge is easy to make, ragi malt porridge or popularly known as ragi java is slightly complicated. This post should simplify it and can be made without any hassle.

Ragi Malt Java Furthermore, some more related and additional tips, suggestions, and variants to the ragi malt java recipe. Firstly, for the best results, you may need to dry roast the flour before it is used in this malt porridge. I have not roasted it as it is store-bought roasted and hence it becomes an optional step. Secondly, I have used yogurt or curd as an additional ingredient with the ragi flour. Yogurt helps to get the proper consistency, but you may also add milk or even coconut milk. Coconut milk can be a great vegan alternative. Lastly, if you wish to have a sweet taste in your porridge, you may use jaggery instead of sugar. Avoid using white sugar as it defies the whole healthy aspects of this porridge.

It is basically a nutritious and healthy semi-liquid meal made with ragi or finger millet or nachni. Ragi Java or Ragi Porridge is typically prepared for a morning breakfast meal if not for lunch and dinner and is considered as one of the healthy and simple meals. It is a popular meal especially in South India where it is served to kids especially in the regional or countryside before going to school or college. Millet based recipes are typically known for their health benefits and even this recipe is not different.

Finger millet or ragi nachni is rich in fiber, protein, and essential nutrients which help to improve digestion and lowers blood sugar levels. Hence it is typically served to diabetic patients as compared to rice or wheat-based meals. Ingredients
  

  • ¾ cup ragi flour
  • 5 cup water
  • 1 cup curd
  • ¾ tsp salt
  • ½ tsp cumin powder
  • ½ onion, finely chopped
  • 2 chilli, chopped
  • 3 tbsp coriander, chopped

Instructions
 

  • firstly, in a bowl take ¾ cup ragi flour and 1 cup water.
  • mix well making sure there are no lumps.
  • in a pan take 4 cup of water and get to a boil.
  • add in the prepared ragi mixture and stir well.
  • continue to stir until the mixture turns glossy.
  • cook until the mixture thickens and holds the shape.
  • cool it completely, and make small balls out of it.
  • drop into water, cover, and allow to ferment for 8 hours.
  • after 8 hours of fermenting, squeeze and mix until everything is well combined.
  • whisk well making sure there are no lumps.
  • add in 1 cup curd, ¾ tsp salt and mix well.
  • also add ½ tsp cumin powder, ½ onion, 2 chillies, 3 tbsp coriander. mix well.
  • finally, enjoy ragi java topped with onions and coriander.
