being a south indian, curd or yoghurt is a must and necessity in our day to day life. our meal typically ends with either curd or curd rice and hence i prepare homemade curd frequently for our daily use. the point i am emphasising here is curd or yoghurt has become an integral part and eventually the recipes using it. one such popular recipe prepared by not just south indian, but also by north indian is masala chaas or spiced buttermilk milk. there are several ways and varieties of this subtle drink which typically differs with its ingredients and consistency. but this recipe deals with a thick and frothy masala lassi recipe with a smoked cumin flavour and thus full of flavour in each sip.
the masala chaas recipe can be prepared in minutes without much effort, yet some tips and suggestions while preparing it. firstly, i personally like a sour taste in my chaas drink and i have used sour curd for the same. alternatively, you can use non-sour curd or fresh curd and control the sourness by adding lemon juice as per your taste. secondly, you can easily extend the recipe by adding other spices and herbs as per your taste. you can add coriander leaves, hing and also temper with mustard and jeera seeds. lastly, you can prepare it and store it in the fridge for a day or two. but make sure to blend it for 30 seconds before serving to get the extra frothy texture.

Ingredients
- 2 cup curd / yogurt, chilled
- 10 leaves mint / pudina
- 1 inch ginger
- ¾ tsp cumin powder / jeera powder
- ½ tsp pepper, crushed
- ½ tsp salt
- 1 cup water, chilled
- 2 piece red-hot charcoal
- ¼ tsp cumin / jeera
- ¼ tsp ghee / clarified butter
- few ice cubes, for serving
Instructions
- firstly, in a blender take 2 cup chilled curd.
- also add 10 leaves mint, 1 inch ginger, ¾ tsp cumin powder, ½ tsp pepper and ½ tsp salt.
- add 1 cup water and blend to thick frothy later on top.
- now place a small cup in the centre and keep 2 pieces of red-hot charcoal.
- add in ¼ tsp cumin and pour ¼ tsp ghee.
- cover with aluminium foil and allow to rest for 2-3 minutes, or till aroma is infused into lassi.
- finally, serve masalaa lassi with few ice cubes garnished with few mint leaves.
