Awadhi cuisine is one such regional cuisine that has its roots in the northern state of Uttar Pradesh and mainly deals with rice and veggies. The Tahari recipe is a popular rice recipe with attributes similar to the pulav recipe.

I have posted several rice-based recipes, particularly pulao recipes or biryani recipes. But this veg tehri recipe or veg tehari recipe is very unique and is different from other rice-based recipes. The tahri recipe is prepared by the Muslim community as a vegetarian dish with no meat. In other words, it is one such rare recipe made during meat is prohibited. This dish is mainly prepared with potatoes, preferably with baby potatoes and dry spices. But there are several variations to this simple rice recipe which is prepared with a choice of vegetables. I like it with potatoes and other vegetables but it is completely open-ended and can be experimented with easily.

Veg Tehri Rice

The recipe is very easy to prepare, yet some easy tips and suggestions while preparing the veg tahari recipe. Firstly, I would heavily recommend using basmati rice and do not experiment with other rice. I have tried this once with Sona Masuri rice and was manageable but not great. Secondly, the traditional recipe does not deal with other vegetables or leafy veggies. But as an experiment, you can add finely chopped dill leaves and also some palak leaves. Lastly, you do not require any side dish served with this rice recipe. But tastes amazing when served with a choice of raita or mirchi ka salan recipe.

Ingredients
  

  • 2 tbsp ghee
  • 1 tsp cumin
  • 1 bay leaf
  • ยฝ tsp pepper
  • 1 black cardamom
  • 4 pods green cardamom
  • 5 cloves
  • 1 inch cinnamon
  • 2 tbsp kasuri methi, crushed
  • pinch hing
  • ยฝ onion, sliced
  • 5 cloves garlic, chopped
  • 1 potato, cubed
  • 1 carrot, chopped
  • 5 beans, chopped
  • 3 tbsp peas
  • 10 cauliflower, florets
  • ยฝ tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp garam masala
  • ยพ tbsp salt
  • 2 tbsp coriander, chopped
  • 2 tbsp mint, chopped
  • 2 chilli, slit
  • 3 cup water
  • 1ยฝ cup basmati rice, soaked 20 minutes
  • 2 tsp lemon juice

Instructions
 

  • Firstly, in a large kadai heat 2 tbsp ghee and saute spices till they turn aromatic.
  • Addย ยฝ onion,ย 5 cloves garlic and saute well.
  • Also addย 1 potato, 1 carrot,ย 5 beans,ย 3 tbsp peas, 10 florets cauliflower.
  • Stir fry till the vegetables turn crunchy.
  • Keep the flame low; add ยฝ tsp turmeric, 1 tsp chilli powder, 1 tsp garam masala, and ยพ tbsp salt.
  • Further addย 2 tbsp coriander,ย 2 tbsp mint, 2 chilli and saute until the spices turn aromatic.
  • Add inย 3 cup water and mix well.
  • Add 1ยฝ cup basmati rice (soaked 20 minutes) and mix gently.
  • Add 2 tsp lemon juice and bring the water to a boil.
  • Once the water comes to a boil, cover and simmer for 20 minutes.
  • Fluff the rice gently making sure the rice is cooked well.
  • Finally, enjoy Tehri Pulao Recipe with raita.
