But for festivals like Diwali or Deepavali, we may crave for multiple snacks to share with our friends and family. Either we end up preparing just one or stress ourselves with the combination and permutation of multiple doughs for different snacks. To solve this problem I am presenting you with an all-purpose or multi-purpose rice flour and besan dough to prepare snacks like sev, chakli and ribbon pakoda. While the options are 10 plus, I have shown main 3 types of deep-fried snacks with this dough.

But let me tell you this, each snack has different kinds of proportions and ratios, but this dough caters for all. Hence, do not try these multiple snacks with any dough. Secondly, due to the nature of multipurpose, the snacks are generally on the softer side and are not brittle. Hence try not to prepare these snacks in bulk and use it within a week. Lastly, deep frying for these snacks has to be in low flame. Low flame helps to make these crisp and crunchy.

Ingredients
for dough:
- 3 cup rice four, fine
- 1 cup maida
- ¼ cup besan / gram flour
- ¼ tsp turmeric
- 1 tsp chilli powder
- pinch hing
- 2 tbsp sesame
- 1 tsp salt
- 1 tbsp butter
- water, for kneading
- oil, for frying
Instructions
- firstly, in a large bowl take 3 cup rice four, 1 cup maida and ¼ cup besan.
- add ¼ tsp turmeric, 1 tsp chilli powder, pinch hing, 2 tbsp sesame and 1 tsp salt.
- also, add 1 tbsp butter and mix well by crumbling the flour.
- now add water and start to knead the dough.
- knead to the smooth and soft dough without putting much pressure.
- now to prepare snacks, take the mould and fix it to chakli maker. you can use star, line or hole moulds to make a variety of shapes.
- stuff the dough into the chakli maker and close tight.
- now press into hot oil by giving random shapes. the shape depends on the mould you have selected.
- fry on low flame until the chakli turns golden brown and crispy.
- drain off to remove excess oil.
- finally, diwali snacks are ready and can be stored in an airtight container for 2 weeks.

Notes:
- Firstly, make sure not to overcrowd the oil, else the snacks will be difficult to fry and not turn crispy.

- Finally, frying on low flame helps to keep Diwali snacks crunchier for longer.
