bread dhokla recipe | instant bread dhokla | quick & easy bread dhoklas with detailed photo and video recipe. easy and instant version of khaman dhokla recipe prepared with leftover sandwich breads, curd / yoghurt and semolina rava. an ideal breakfast or snack recipe from the gujarati cuisine which would be certainly loved by kids and adults.
there are several variations to this shortcut and instant bread dhokla recipe. the most common and easy method is to steam the leftover bread directly in a steamer and add the khatta meetha tadka on top of it. this is also known as bachelor dhokla due to the ease and simplicity of this recipe. the other variation is to mix the bread crumbs with besan or chickpea flour and follow the same procedure. however in this recipe post, i have used rava in the place of besan and prepared with rava or also known as semolina or sooji.
furthermore, some important tips and suggestions for a soft and spongy instant bread dhokla recipe. firstly, i have used sandwich white bread slice for this recipe and i would recommend the same to use. i have not tried this with brown bread or even with multi grain bread, but i guess you would not get the same result with it. secondly, soak the rava and bread mixture properly for 15 to 20 minutes so that rava absorbs the moisture and softens. otherwise the dhokla may turn hard and brittle. lastly, i have added eno fruit salt just before steaming the dhokla. as an alternative, you can also add baking soda as a raising agent.

Ingredients
- 4 slice bread, white / brown
- ½ cup rava / bombay rava / sooji / semolina
- ¾ cup curd / yogurt
- 2 tsp oil
- ½ tsp ginger paste
- ½ tsp green chilli paste
- salt to taste
- ¼ tsp turmeric / haldi
- ½ cup water, as required
- 1 tsp eno / fruit salt
for tempering:
- 2 tsp oil
- ½ tsp mustard / rai
- ½ tsp jeera / cumin
- few curry leaves
- ¼ tsp sesame seeds / til
- pinch of hing / asafoetida
- 1 green chilli, slit
- ¼ cup water
- ½ tsp sugar
- pinch of salt
- 1 tbsp lemon juice
other ingredients:
- 2 tsp fresh coconut, grated
- 2 tsp coriander leaves, chopped
Instructions
- firstly, add in bread crumbs, ½ cup rava, ¾ cup curd.
- also add ½ tsp ginger paste, ½ tsp green chilli paste, ¼ tsp turmeric, 2 tsp oil and ½ tsp salt.
- combine adding ½ cup water and mix well.
- allow to rest for 15-30 minutes.
- additionally add eno fruit salt.
- mix gently till the batter turns frothy.
- transfer and steam for 15 minutes.
- prepare the tempering by heating oil.
- add in ½ tsp mustard, ½ tsp jeera, ¼ tsp sesame seeds and pinch of hing.
- also add 1 green chilli, few curry leaves and allow to splutter.
- further add ¼ cup water, ½ tsp sugar and pinch of salt.
- add in 1 tbsp lemon juice and mix well.
- pour the tempering over dhokla and cut.
- finally, garnish with coriander and grated coconut and serve instant bread dhokla.
how to make instant bread dhokla with step by step photo:
- firstly, trim the sides of 4 bread slices and powder them coarse to form bread crumbs.
- add in ½ cup rava, ¾ cup curd.
- also add ½ tsp ginger paste, ½ tsp green chilli paste, ¼ tsp turmeric, 2 tsp oil and ½ tsp salt.
- combine well without forming any lumps.
- now add ½ cup water and mix well to form a idli consistency batter.
- allow to rest for 15-30 minutes, or till rava absorbs moisture well.
- additionally add eno fruit salt. you can alternatively use a pinch of baking soda.
- mix gently till the batter turns frothy.
- transfer to the greased plate.
- immediately steam the dhokla batter for 15 minutes on medium flame or till the dhokla gets cooked completely.
- now cool the dhokla for 5 minutes and then unmolded it.
- prepare the tempering by heating oil.
- add in ½ tsp mustard, ½ tsp jeera, ¼ tsp sesame seeds and pinch of hing.
- also add 1 green chilli, few curry leaves and allow to splutter.
- further add ¼ cup water, ½ tsp sugar and pinch of salt.
- boil the water well.
- add in 1 tbsp lemon juice and mix well.
- pour the tempering over dhokla.
- and cut the dhokla to desired shape.
- garnish the dhokla with chopped coriander leaves and fresh grated coconut.
- finally, serve instant bread dhokla with green chutney and tamarind chutney.
notes:
- firstly, soak the dhokla batter well before adding eno for soft and spongy dhokla.
- also steam on medium flame for 15 minutes or till it gets cooked completely.
- additionally, adding sugar to tempering is optional.
- finally, instant bread dhokla taste great when served hot.
