uttapam recipe | onion uttapam | uthappam recipe | masala uttapam with step by step photo and video recipe. a popular breakfast dosa recipe served in many darshini and sagar hotels in bangalore and other south indian restaurants. it is typically served with coconut chutney, tomato chutney and even in sambar recipes.

dosa recipes are prepared quite frequently in my house and i try different variations of it. mixed veg uttapam recipe is one such recipe which i prepare with any left over vegetables. however, i try to add finely chopped onions always and i think onions are a must in any uttapam recipe. moreover, i even prepare uttapam with both dosa batter and leftover idli batter. when preparing with dosa batter, i add rava or semolina depending upon the consistency of dosa batter to make it thick.

furthermore, some important tips for a perfect uttapam recipe. i have prepared the batter with a 3:1 ratio of rice and urad dal. i have used normal sona masuri rice, however, you can use any idli rice or dosa rice. i do not recommend to use basmati rice for this recipe. secondly, i have added finely chopped green chillies as a topping, skip this if you do not like it or serving it to kids. lastly, if you are using an idli batter then make sure the batter is bit thin but comparatively thicker to dosa batter.

Ingredients
  

for onion toppings:

  • 2 onion, finely chopped
  • 2 chilli, finely chopped
  • 1 inch ginger, finely chopped
  • few curry leaves, finely chopped
  • 2 tbsp coriander, finely chopped
  • ½ tsp salt

for batter:

  • 3 cup dosa rice / sona masuri rice
  • ½ tsp methi / fenugreek seeds
  • 1 cup urad dal
  • 2 cup puffed rice / churumuri / murmura, washed & squeezed
  • tsp salt
  • oil for roasting

Instructions
 

  • firstly, in a large bowl take 2 onion, 2 chilli, 1 inch ginger, few curry leaves, 2 tbsp coriander and ½ tsp salt.
  • mix well making sure everything is well combined.
  • also, heat the griddle and pour a ladleful of dosa batter.
  • spread out in a circular motion slightly thick than regular masala dosa.
  • now spread the toppings on top of the uttappa evenly.
  • after the topping have been added press gently so the toppings are pressed into the batter.
  • add 1 tsp of oil around the uttappa.
  • cover it and let it cook for 1-2 minutes in low flame.
  • flip over on the other side once the uttappa turns golden brown.
  • finally, onion uttapam is ready to be served with chutney of your choice.

how to make mixed veg uttapam with step by step photo:

dosa batter preparation:

  1. firstly, in a large mixing bowl soak 3 cup dosa rice and ½ tsp methi for 5 hours. alternatively, use idli rice / sona masuri rice.

  2. in another bowl soak 1 cup urad dal for 3 hours.

  3. drain off the water from urad dal and blend to smooth paste adding water as required.

  4. transfer the smooth and fluffy batter of urad dal into a large bowl.

  5. in the blender take soaked rice draining off the water.

  6. bend to a slightly coarse paste adding water as required.

  7. transfer the rice batter to the bowl of urad dal batter.

  8. now take 2 cups washed & squeezed puffed rice in a blender.

  9. and blend to smooth paste. alternatively, use leftover rice or soaked sabudana.

  10. mix well making sure everything is combined well.

  11. now cover and rest in a warm place for 8-10 hours or till the batter ferments and doubles.

  12. after 8 hours, batter doubles indicating well fermented with air pockets present.

  13. add 1½ tsp salt to the batter and mix gently without disturbing the air pockets.

notes:

  • firstly, finely chop onions in the toppings.
  • also, spread the dosa batter slightly thick, else the dosa will break while flipping.
  • additionally, cook on low to medium flame to prevent from burning.
  • finally, onion uttapam recipe tastes great when served with coconut chutney.
