pineapple halwa recipe | pineapple delight recipe | pineapple sweet or meetha with detailed photo and video recipe. one of the simple and easy dessert recipes made with a combination of pineapple juice and cornflour flour. the recipe is very similar to the famous bombay karachi halwa or carrot delight with pineapple being the additional ingredient. these are soft and jelly in texture with the combination of sweet and sour taste which makes it an ideal dessert recipe for any occasion or celebration feast.
the last time when i posted carrot delight, i got so many requests and comments about a fruit-based delight. there were so many options but i wasn’t sure what to post next. i thought of posting mango, orange or even apple flavoured delight but wanted something special. well, there isn’t anything special about pineapple, but the taste it has to offer is very unique. particularly, the combination of sweet and sour taste makes it one of the best dessert recipes. moreover, the colour of the fruit makes it one of the bright coloured and appetising dessert recipes. to make it more bright i have added yellow food colour, which is completely optional.
furthermore, i would also like to add some additional tips, suggestions and variations to the pineapple halwa recipe. firstly, i would heavily recommend using fresh, tender and juicy pineapple for this recipe. it adds the required amount of sweetness, sourness and flavour to the dessert. secondly, the dessert preparation involves a lot of stirring and mixing to get the right consistency. there is no shortcut to it and stirring it patiently makes it a perfect dessert. lastly, you may keep this dessert in the refrigerator for 2-3 days easily. you may need to reheat or microwave it for 30 seconds so that ghee would melt and make it an ideal dessert.

Ingredients
- 2 cup pineapple
- 3 cup water
- 1 cup corn flour
- 2 cup sugar
- ½ tsp yellow food colour
- 6 tbsp ghee / clarified butter
- ¼ tsp cardamom powder
- 2 tbsp nuts, chopped
Instructions
- firstly, in a mixi jar take 2 cup pineapple and 1 cup juice.
- blend smooth making sure the chunks are ground well.
- now strain the juice extracting the pineapple juice. you can alternatively take 3 cup pineapple juice here.
- now add 1 cup cornflour to the pineapple juice and mix using a whisk.
- further, add 1 cup water and prepare a smooth consistency batter. keep aside.
- in a large kadai take 2 cup sugar and 1 cup water.
- stir well until the sugar dissolves and comes to a boil.
- once the sugar syrup comes to a boil, add prepared pineapple mixture.
- keep stirring continuously, keeping the flame on low to medium.
- after 5 minutes, the mixture will start to thicken.
- add ½ tsp yellow food colour and give a good mix. food colour is optional, it makes the delight attractive.
- now add 2 tbsp ghee and continue to cook.
- the ghee is absorbed completely.
- further, add 2 tbsp more ghee and continue to cook. i have used a total of 6 tbsp of ghee in batches.
- keep stirring until the mixture will start to hold shape and separate the pan.
- also, add ¼ tsp cardamom powder and 2 tbsp nuts. mix well.
- transfer the mixture to a box lined with parchment paper and topped with nuts.
- level up making sure it is of uniform thickness.
- rest for 2 hours or until the dessert is set well.
- cut into the shape of your choice and garnish with chopped nuts.
- finally, enjoy pineapple delight or pineapple halwa topped with more nuts.

notes:
- firstly, make sure to filter out the pineapple pulp from the juice, else the halwa will not be glossy.
- also, adding ghee is optional. however, it will give a nice glossy shine.
- additionally, make sure to keep stirring else the mixture will stick to the pan and burn.
- finally, pineapple delight or pineapple halwa turns hard if overcooked and sticky if undercooked.

You can use banana or pear for change. Instead of sugar you can use honey but sugar is best for halwa. you can store in air tight container box for 1 day
