Sweet Bonda Recipe | Vellam Bonda | Banana Wheat Fritter with detailed photo and video recipe. An easy and simple deep-fried fritter snack made with banana, wheat flour, and some basic spices. There are myriad types of it across India but the variations depend upon the region and individual taste preferences. These are typically savory in taste, but they can also be made as sweet, and sweet bonda or Vellam bonda is one such recipe.

Bonda or pakoda recipes are not something I prepare often. It’s not because of the taste, but because it is deep fried. Having said that, I make these for parties, occasions, or for surprise guests as it is easy and filling snacks. It is so simple to prepare with basic ingredients available in any kitchen pantry. Even with the deep-fried bonda, I am a savory person. But my husband and even my daughter have a big fan following for these sweet deep-fried fritters. Unlike the savory bonda, the sweet bonda does not require any side dish or condiments chutney. Yet when served with spicy chutney, it makes a lip-smacking snack combination.

Furthermore, some more related and additional tips, suggestions, and variations to the sweet bonda recipe. Firstly, the recipe is typically made with wheat flour for consistency and digestion. However, the same can also be made with maida or plain flour, and it tastes great with that. Secondly, deep fry these in small batches so that they get cooked evenly and get a uniform color. Also, while deep frying it can expand so that a bigger deep frying vessel is recommended. Lastly, jaggery is much preferred for the sweetness but other alternative sources can also be used. Sugar is a much easier alternative but may not be healthier compared to jaggery.

Ingredients
  

  • ¾ cup jaggery
  • ½ cup water
  • 2 banana, ripe
  • 2 cup wheat flour
  • ¼ tsp salt
  • ½ tsp cardamom powder
  • ¼ tsp baking soda
  • oil, for frying

Instructions
 

  • Firstly, in a saucepan take ¾ cup jaggery and ½ cup water.
  • Stir well and boil until the jaggery melts completely. Cool and keep aside.
  • In a large bowl, mash 2 banana to a smooth paste texture.
  • Add 2 cup wheat flour, ¼ tsp salt, ½ tsp cardamom powder, and ¼ tsp baking soda.
  • Pour in jaggery water. Make sure to filter out to remove any particles.
  • Mix well making sure everything is well combined.
  • Add water as required and beat the batter till you get ribbon consistency.
  • Now dip your hand in cold water and pinch a small ball-sized batter.
  • Drop it in hot oil keeping the flame on medium.
  • Stir and fry uniformly on medium flame.
  • Drain off the bonda once it turns golden brown and crisp.
  • Finally, Sweet Bonda Recipe is ready to enjoy topped with ghee.

  • Also, you can skip the banana, however you may increase the amount of jaggery.
