benne dosebenne dosa recipe | davangere benne dosa recipe with step by step photo recipe. davangere benne dose is a signature dosa of davangere, karnataka. but now popularly served in all south indian restaurants.

the generous amount of butter is makes the dosa more crispy and tasty. the name davangere benne dose means the dosa with butter which is very popular in davangere. it taste great with  chutney and potato bhaji or potato palya.

i personally love serving the dosa along with different types of chutney recipes: coconut chutneychanna dal chutneyridge gourd chutney, tomato onion chutneysweet potato chutneypeanut chutney, red chutney etc.

i do love dosa recipes, and i think you can see in my blog. i have put several dosa recipes like masala dosa, plain dosa, ragi dosa, godi dosa, maida dosa, tuppa dosa, heerekai dosa and rava dosa.

Ingredients
for dosa batter:
  • 1 cup urad dal / split black lentils
  • 3 cup sona masuri rice / dosa rice
  • ½ tsp methi / menthe / fenugreek seeds
  • 1 cup paper avalakki / beaten rice / poha
other ingredients:
  • 1 tsp sugar
  • ¼ tsp baking soda
  • oil and benne / butter as required
  • salt to taste
Instructions ( 1 cup =255 ml)
preparing batter:
  1. soak urad dal and rice, methi in a separate bowl. add in enough water and soak for 5 hours.
  2. first drain the water from rice and blend to smooth batter. add water if required to make a smooth paste.
  3. transfer to a large vessel. and keep aside
  4. now blend urad dal to smooth fluffy batter.
  5. add a cup of paper avalakki to the blender. and grind to a smooth thick paste.
  6. transfer the batter into the same bowl and mix well.
  7. cover and ferment in a warm place for 12 hours.
preparing dosa:
  1. the next day you can see the batter has raised well indicating its well fermented.
  2. mix the batter slightly.
  3. now add salt, ¼ tsp baking soda and 1 tsp sugar. mix well and keep aside for 5 mins.
  4. you will see the batter has raised slightly because we have added baking soda. this is the perfect batter for davengere benne dose.
  5. heat a dosa tava. add a tsp of oil and wipe it off gently using a tissue. pour a ladleful of the batter on tava.
  6. and spread it in a circular motion forming slightly thick dosa.
  7. cover the dosa for a minute.
  8. once the top of dosa has cooked, add some butter on top and along the sides.
  9. the dosa would have got bright golden colour and turned crispy. serve immediately with coconut chutney and sambar.

notes :

  • use a cast iron tawa to get rich golden colour and crispy dosa.
  • adding a pinch of baking soda is ok, but do not add more.
  • pinch of sugar helps to get rich colour.
  • do not add butter immediately after pouring dosa. add butter once the dosa has roasted for a minute. else you will be seeing white patches over dosa.
  • be generous in adding the butter to the dosas.
