i have been posting a lot of dessert and indian sweets recipes lately and one thing i commonly use is condensed milk. i was getting a lot of requests to show a quick and easy milkmaid recipe so that it can be used in these indian sweets. hence i thought of sharing the recipe with the video. but this recipe is not a traditional way of making condensed milk. the traditional way is to make it by evaporating full cream milk. evaporation takes a lot of time, and also very tiring job to continuously stir it, till it thickens. hence i have shown you a shortcut way to make super creamy and thick condensed milk with the milk powder, sugar and baking soda. you may very well use it for most of the indian sweets, desserts or cake recipes.
furthermore, some more tips, suggestions, variations to milkmaid recipe. firstly, i would heavily recommend using the finest quality of milk powder to get super thick and creamy condensed milk. do not compromise on it as you may end up with thin and not so frothy milk. secondly, the addition of cornflour and baking soda is essential for a frothy and creamy texture for this recipe. hence there is no point of avoiding it or attempting this recipe without it. lastly, there is no preservative added to this recipe and hence the shelf life is less compared to the store-bought one. yet you can preserve this in an airtight container for a minimum of 1 week in the refrigerator.
