out of all the indo chinese recipes i prepare often, this recipe of gobi fried rice recipe is the less frequent recipe i make it. it is not because of the taste or flavour. but because you have to cook 2 separate recipes and combine it in the final step to make gobi manchurian rice. having said that, i end up making this recipe when i have some leftover fried rice or even gobi manchurian snack. so i end up making the other to make the leftover attractive and more presentable. well, i guess this option should be more feasible compared to making both the recipe from scratch. the sweet and spicy sauce from manchurian should make the fried rice even more flavoured and tasty.
furthermore, some easy and important tips and suggestions for a perfect flavoured gobi fried rice recipe. firstly, selecting the cooked rice is very critical for any fried rice recipe. i would heavily recommend to use moisture free basmati rice or perhaps even sona masuri rice. secondly, you can precook the gobi fritters well ahead in advance and store in pre-heated oven. as matter of fact, you can even experiment the recipe by leftover paneer, mushroom, and baby corn manchurian. lastly, if you desire for more spice and zing in your taste, add schezwan sauce to the sauce and mix it with gobi and fried rice.

Ingredients
for blanching:
- 30 florets gobi / cauliflower
- 1 tsp salt
- 3 cup hot water
for batter:
- ½ cup maida / plain flour
- 2 tbsp corn flour
- ½ tsp kashmiri red chilli powder
- ½ tsp ginger garlic paste
- ½ tsp salt
- ½ cup water
- oil for frying
for fried rice:
- 4 tsp oil
- 3 clove garlic, finely chopped
- 1 chilli, slit
- ½ onion, finely chopped
- 4 tbsp spring onion, chopped
- ½ carrot, chopped
- 4 beans, chopped
- ½ capsicum, chopped
- 1 tbsp vinegar
- 1 tbsp soy sauce
- 4 cup cooked basmati rice
- 1 tsp pepper, crushed
- ½ tsp salt
Instructions
- firstly, take 4 tsp oil and saute 3 clove garlic, 1 chilli.
- now add ½ onion and 2 tbsp spring onion. saute on high flame.
- further add ½ carrot, 4 beans and ½ capsicum. stir fry.
- make a gap in the centre and add 1 tbsp vinegar and 1 tbsp soy sauce.
- stir fry on high flame.
- add in fried gobi and mix gently coating sauces well.
- further add cooked rice, 1 tsp pepper and ½ tsp salt and mix gently.
- finally, add 2 tbsp spring onion and enjoy gobi fried rice.
how to make gobi fried rice with step by step photo:
- firstly, in a large bowl take 30 florets gobi, 1 tsp salt.
- pour 3 cup hot water and rest for 10 minutes.
- drain off the gobi and keep aside.
- now prepare the batter by taking ½ cup maida, 2 tbsp corn flour, ½ tsp chilli powder, ½ tsp ginger garlic paste and ½ tsp salt.
- add ½ cup water and whisk to smooth lump free batter.
- further add blanched gobi and coat well.
- deep fry the coated gobi in hot oil.
- stir occasionally, keeping the flame on medium.
- fry until the gobi turns golden and crisp.
- now drain off the gobi and keep aside.
- to prepare the fried rice, take 4 tsp oil and saute 3 clove garlic, 1 chilli.
- now add ½ onion and 2 tbsp spring onion. saute on high flame.
- further add ½ carrot, 4 beans and ½ capsicum.
- stir fry on high flame, without overcooking.
- make a gap in the centre and add 1 tbsp vinegar and 1 tbsp soy sauce.
- stir fry on high flame.
- add in fried gobi and mix gently coating sauces well.
- further add cooked rice, 1 tsp pepper and ½ tsp salt and mix gently. (to prepare rice check fried rice recipe)

notes:
- firstly, prepare fried rice just before serving, as fried gobi turns soggy.
- also, make sure to use leftover rice or cool the rice before preparing fried rice.
